Cheese Quesadillas for Cheese Lover’s Day

Today is National Cheese Lover’s Day. For Kiddo and I that is a reason to celebrate. We love cheese. Our idea of a snack is a nice Charcuterie Board.

If you’ve been around a while, you know our running joke. Hubby (who was born in Wisconsin) was kicked out of his home state because he doesn’t like cheese and he doesn’t drink beer. Now the beer part I don’t mind. It’s the cheese thing that can sometimes be a pain. No Fondues at our house unless it’s Chocolate. No Cheeseburgers for him. On the other hand, he likes extra cheese on his pizza and an American Grilled Cheese Sandwich. When it comes to grilled cheese, Kiddo and I like a Gourmet Grilled Cheese, be it a Panini or Ham and Cheese.

Hubby does not put cheese on his tacos, but he doesn’t mind a grilled burrito with cheese inside. To me it makes no sense. He will eat Cheese Enchiladas. And lucky for us, Cheese Quesadillas.

Spicy Three Cheese Quesadilla
Spicy Sauce
1/2 cup Mayonnaise
2 tablespoons minced Nacho Jalapeño Peppers
1 tablespoon Jalapeño Juice from the jar
1/2 teaspoon New Mexican Red Chili Powder
1/2 teaspoon Cumin
1/4 teaspoon Garlic Powder
Pinch Cayenne Pepper

Place mayonnaise in a medium mixing bowl. Mince jalapeno peppers, add to mayonnaise. Add juice from the jar, chili powder, cumin, garlic powder and cayenne pepper. Mix well, taste and adjust seasoning as desired.

Cover and chill in the refrigerator for at least 2 hours or until ready to use.

Three Cheese Quesadillas
1 cup Mexican Cheese Blend
1 cup Pepper Jack
1 cup Mexican Melting Cheese
3 tablespoons Taco Seasoning
3 tablespoons Butter, divided
3 (12-inch) Jumbo Flour Tortillas

In a bowl mix together all the cheeses. Season with taco sauce, toss to combine.

Melt a tablespoon of butter on a large flat skillet or griddle. Once melted place a tortilla into the pan. Working quickly, spread a third of the spicy sauce over the tortilla. Scatter about a cup of the cheese mixture done half of the tortilla. Fold tortilla over the filling, grill until underside is golden. Flip, continue to grill until the cheese is melted, about 4 minutes longer.

Repeat until all the Quesadillas have been made. Hold in a warm oven until ready to serve. Great with refried beans and margaritas.
