And Then The Light Came On

Growing up our house was always filled with neighbors, close friends and extended family. Dad had the back patio enclosed. In the winter there were heavy sheets of plastic that were locked into place to keep out the weather. In the summer, those were removed, allowing the Delta breezes to keep us cool.

Two big picnic tables were set up in the patio. At times it was necessary to add a card table or two to accommodate all those gathered for a meal, especially on Sundays. There was but one rule in the meal preparation – no one was allowed to get up from the table hungry. I don’t know what it means to cook for just three people. There are always leftovers. The bottom shelf of the freezer is divided in half. One side is for Friday’s seafood consumption, the other side are bags of leftovers waiting to be served again. Some nights there might only be enough leftover to pack a couple of lunches. Other nights, in addition to the lunches, there’s enough for another complete meal. Since most of the larger portions of leftovers involve Pasta, all I need do is warm some bread and make a salad.

Rarely do we have enough taco meat leftover for a second meal. What little is left Kiddo will take for lunch along with a tortilla or two. Or I’ll whip up Omelette for myself filled with taco meat. Every now and again, I get more creative with the leftover taco filling. This is one such inspired meal. Thank you Lord, for giving me an imagination and the willingness to try new things.

A Twist on Tostadas for Breakfast
2 English Muffins
2 tablespoons Butter
1/2 cup Refried Beans
1 cup Taco Meat
1/4 cup Cotija Cheese

Split open the English Muffins and pop them in the toaster to get golden. Spread a little butter on the split side of each muffin, hold in a warm oven.

Warm the refried beans and taco meat in the microwave or on the stovetop, which ever is your preferred way of warming left-overs. Remove muffins from the oven. Divide the warm beans between the muffins, spread out.

Top with the taco meat, then a sprinkling of cheese as a finishing touch. Great when served with Mexican Style Cinnamon Coffee.
