Well This is Different

The clock is ticking down to Hubby’s Retirement. I am so happy for him. I just wish he would find a hobby. Wood crafting would be nice. Anything to keep him from being under foot. Maybe once he’s fully retired, he’ll join the Knights of Columbus again.

Years ago, we belonged to a very small parish. There was no church. We met in the lunch room of a nearby grade school until the church could be built. While there was a larger, more established parish not far away, there was no Roman Catholic parish in this particular part of town. It was an up-and-coming neighborhood with a lot of younger families. While Hubby was barely in his forties, he was the old fart in the parish. He really enjoyed the Knights. Just as I enjoyed the Ladies Auxiliary. When we moved to Las Vegas, Hubby wanted to continue as a Knight. Our new parish was different. The younger men were far too busy to join. The older guys used the Knights as an excuse to get away from the old ball and chain. Hubby said most of the meetings were spent complaining about their wives, their health, and everything else. It really soured him on the whole Knights experience. The parish we belong to now has a great group of guys, very active. They live and breath for the church. While Hubby does help out from time to time, he’s not ready to commit full-time just yet. His days are so packed with the stress of his current position in the company, all he wants to do is come home at the end of the day and collapse in front of the TV.

Once he’s retired and we’ve settled in Tennessee, I hope we can both become more active. Most Knights have a ladies auxiliary attached, so that would be nice for both of us. At our current parish, they don’t. What they do have is a Lady’s Bible Study that meets on the same evenings as the Knights.

While the clock is ticking toward retirement, there’s still time to build up the one area of home cooking I am lacking – breakfast. So whenever possible between now and his retirement, I plan to take a new recipe out for a test drive. This recipe for French Toast was interesting – in a good way. Think of it as French Toast wrapped in a Buttermilk Crêpe .

Cinnamon Batter-Dipped French Toast
2 cups Bisquick or other Pancake Mix
1-1/4 cups Milk
2 teaspoons Cinnamon
1 teaspoon Vanilla
2 Eggs
8 slices Bread
8 tablespoons Butter or as desired
Maple Syrup as desired

Warm a griddle to medium heat. Grease if necessary.

In a blender mix Bisquick mix, milk, cinnamon, vanilla and eggs until smooth. Pour the batter into a shallow dish. Dip bread into batter; drain excess batter back into bowl. Place bread on hot griddle.

Cook 1 to 2 minutes on each side or until golden brown. While still on the griddle, top with butter to speed up the melting process.

Transfer to individual plates. Slather with Syrup and enjoy. Lovely with a glass of Orange Juice or a Cappuccino.
