Before we get into today’s delicious share, I’d like to talk for a moment. Years ago when Hubby and I were in the process of building a custom home every time something new arrived, I’d call all the neighbors together to show them what we had done.
I’ll never forget after we moved I ran into one of those neighbors. She told me that when she first met me, she thought I was so full of myself, showing off all the time. It wasn’t until she got to know me that she realized I wasn’t bragging, I was sharing. “Look at this awesome rotisserie we added to the built-in barbecue.” What I was really saying was “Just think of all the amazing things we can cook together.” It’s the same with my faith and my love of God the Father, Son and Holy Spirit. I don’t think for a moment this makes me better. It makes me humble, but also glorified. Not because I’m better than others, but because He calls me to prostrate myself, to serve, to be last and that is glorious in that I am overflowing with joy. Sharing our faith isn’t about us, it’s about Him and all He does. Christ is our mirror – the reflection of all we can be because we are made in His image. How awesome is that? I know I can go off the deep end when it comes to my love for my Lord and Savior. Is that so bad?
Okay, let’s get focused on today – it’s Peach Cobbler Day. It’s also Thomas Jefferson Day, but right now I’d rather focus on the Peach Cobbler. I have such a warm memory of summer evenings on the farm. Peaches grew in our small orchard. On warm summer nights we’d gather as a family, sit on the porch watching the sun set and enjoy a fresh peach cobbler made with the fruits of our labor that very day. Oh how I cherish the simple pleasures of life.
Easy Peach Cobbler
6 frozen Biscuits
1 can Peach Pie Filling
4 tablespoons Butter
1/2 cup Brown Sugar
1/4 teaspoon Vanilla Extract
6 scoops Vanilla Ice Cream, optional
Spray casserole dish with cooking spray, set aside. Heat oven to 375-degrees.
Place frozen biscuits in the prepared casserole dish. Empty pie filling over the biscuits. Set casserole dish aside.


In a sauce pan over medium heat, melt butter and brown sugar together. Stirring, allow the two to mingle and come together. Remove from heat, whisk in the vanilla.


Pour butter mixture over the peach pie filling. Cover the dish with foil. Place in the heated oven to bake for 30 minutes.

Let cool for 5 minutes. Dish up into bowls, top with a scoop of vanilla ice cream if desired.
