Today just happens to be Hubby’s favorite “Candy” Day. Chocolate Cashew Clusters are his go-to treat anytime we wander into a real candy shop. He’s even been known to make them all on his own – with much pride I might add.
To let Hubby know how proud I was of his quick recovery from hip replacement surgery, I thought making his favorite candy would be sweet. The surgery and recovery were all a part of lent, so certain restrictions were in play. (Giving up desserts for Lent) I trust that God understood what was in my heart and forgave me for rewarding Hubby with chocolate. In a way, it was God’s fault. We prayed for a speedy recovery. We were surrounded by prayer. And his recovery was nothing short of a miracle of anwered prayers. Blessed be the Lord.

Salty Cashew Clusters
12 oz Quality Milk Chocolate
1/2 tablespoon Lard
10 oz Cashews
1/2 bar Hershey’s Dark Chocolate (about 2-1/2 oz)
Kosher Salt for finish
In a double boiler over medium-low heat melt the milk chocolate. Once melted, add lard. Stir until smooth.
Add cashews, a handful at a time, stirring constantly to coat. Chop dark chocolate into smaller pieces. Add broken bits of Hershey’s Chocolate into the pot. Stir to melt dark chocolate into the cashew clusters.
Note: The dark chocolate is purely optional to give the clusters a richer, deeper chocolate flavor.
Use a place spoon to spoon onto waxed paper. Sprinkle with a pinch of salt while the chocolate is still warm. Let cool. Store in an air-tight container to enjoy as you please.
