The Joy of Sharing Good News

Today is one of those times when two Feast Days collide – and only one can take presidency over the other. Since Easter moves about as it does, those Feast Days and Memorials tied directly to Easter and Pentecost also move.

The Feast that is normally acknowledged on this day is Mary’s visitation to her elderly cousin, Elizabeth. It is yet another example of all things are possible through the Lord. Sarah was old when she became a mother. Just as Elizabeth was old and thought to be barren, and yet the Lord had other plans. She was to give birth to the forerunner, that voice crying out in the wilderness. Even our blessed Mother’s own mother was beyond the age of bearing children when her cries to the Lord were answered. All things are possible. Every prayer is answered. However; those answers come in His time, according to His plans. We don’t always see or understand. These things need to be acknowledged even if today’s celebration is not focused on the Visitation.

Today is the first Sunday following Pentecost. Pentecost heralded in the end of the Easter Season, and the birth of a new covenant, a new Church, guided by the Holy Spirit. Today’s focus is on that sprit, and the belief in One God in three persons – the Father, Son and Holy Spirit. Today is Holy Trinity Sunday.

Just as a clover has one stem with three leaves, so it is with God. One being, three entities. Some have compared this existence in a way that makes it easier to understand. We have a mind, thoughts, intelligence, will. This can represent God the Father. He willed “Let there be light” and there was light. We also have a physical presence. We can touch and be touched, eat, drink, walk about. This physical existence can be thought of as God the Son. He felt the pain on the cross. He knew what it was like to be hungry, to be cold and at times to be lonely. Finally there is a spiritual self – that place that feels connected to the world around us, that is filled with hopes and dreams and aspirations. It is not limited to the physical being but is a part of the intellectual being. This is God the Holy Spirit, and it is that spirit that takes up residence in us, joining with our souls, when we become His adopted children. What a beautiful knowledge we have all been given.

Remember, all things are possible through God for we are His and He will never foresake us.


Blueberry Belgian Waffles
4 Eggs, separates
4 tablespoons Butter
1 cup Milk
2 cups Flour
2-1/2 teaspoons Baking Powder
1 tablespoon Cornstarch
2 tablespoon Sugar
2 teaspoon Vanilla
1 cup Blueberries Butter for serving
Syrup for serving

Heat oven to 300 degrees. Place a wire rack inside a rimmed baking sheet, hold in the oven

Separate egg whites from yolks, place into 2 bowls. Melt butter, allow butter to cool to the touch.

Beat egg yolks and sugar in a bowl until light. Add cooled melted butter, milk and vanilla extract. In another bowl whisk together the flour, baking powered, cornstarch and salt, beat well. Add flour mixture to the yolk mixture. Beat egg whites until stiff and gently fold into batter. Set aside.

Heat a Belgian Waffle Maker to highest setting. Spray with cooking spray while heating. Ladle batter into the maker, scatter blueberries over the top of the batter. Close and let cook until steam ceases to rise from the maker. Open, spread butter over the waffle while still hot.

Hold waffle on a rack inside a rimmed baking sheet, place in a warm oven. Repeat until all the waffles have been made. Serve with butter and syrup and enjoy.
