It’s Tuesday, Will This Do?

Today is National Fudge Day. Maybe it’s just me, but I’m not a fan of fudge in the summer. Dad made the best fudge ever. And he always made it at Christmas Time. So for me fudge is a Holiday thing.

Besides, today is Tuesday. How can I trade dishes that, by law, require the consumption of Margaritas for fudge? Hum, I wonder, is there a recipe out there for Tequila fudge? I mean, if you can put Tequila in a truffle, why not fudge?

See how I am – off track yet again. I don’t know if that’s the beauty of old age or a curse, we can just wander about. I have noticed that wandering often produces some of the most meaningful discoveries. Be it to physically wander off or mentally drift away. Who doesn’t like making new discoveries and learning new things?

Take Wantons for example – that’s Asian, right? And yet Wantons are a great short cut for making raviolis from scratch or in this case for making Bite-Size Taco Pies.

Mini Tao Cupcakes
1 lb Ground Beef
1/2 lb Chorizo
3 tablespoons Taco Seasoning
2 tablespoon Tomato Paste
1/4 cup Beef Stock
1 cup Pepper Jack Cheese
4 Green Onions
2 firm Roma Tomatoes
Cooking Spray
12 Wonton Wrappers
12 Nacho Jalapeño Pepper Slices
1/2 cup Sour Cream

Heat oven to 375-degrees. Spray a 12-cup muffin tin with non-stick cooking spray.

In a skillet over medium heat, cook the ground meats together until cooked through. Drain well, return to skillet. Add taco seasoning, tomato paste and beef stock. Simmer for 6 minutes until the mixture thickens, stirring occasionally.

While the meat mixture simmers, trim green onions, slice. Seed tomatoes, dice into small pieces and set aside.

Place a wonton wrapper in each muffin cup, pressing it into the bottom and up the sides. Add a 1/4 cup of the taco meat mixture into each cup. Sprinkle cheese blend over the taco meat. Top each “cupcake” with a slice of Jalapeño.

Bake for 10-12 minutes or until the wonton wrappers are golden and the cheese is melted and bubbly.

Remove from the oven and let the taco cupcakes cool for a few minutes. Top with sour cream, green onions and diced tomatoes. Great as a starter or for Taco Tuesday with a side of refried beans.

Serve warm and enjoy!
