Saint Thomas should stand as a great example for all of us – those who have embraces faith with zeal right from the beginning, and especially those of us who have struggled with doubt.
Like other Apostles, little is recorded of Thomas’ life. It would be safe to presume he was born in Galilee, and that he came from a humble family. However; it was never made clear what Thomas did before becoming an Apostle. There isn’t even a clear picture as to when or how he was called to Christ. That said, the gospels share more about his personality then they do about the others.
Thomas was not just a follower, he was a part of the inner circle. Yet even as an eye-witness to the miracles, even then his faith was weak. Thomas had doubts. His doubts makes Thomas somehow more relatable to so many. And his conversion to a deep, unshakable faith proves that no matter how small your faith may seem, it is enough for God to work within you. If anything, Saint Thomas should be a source of great inspiration. When Christ appeared to Thomas, He invited him to touch the wounds in order that he might believe. Thomas responds to Christ’s invitation by making that simple declaration of faith echoed by Christians throughout the ages: My Lord and My God. As a Catholic these same words are uttered as first the Body and then the Blood are elevated by the priest after the consecration at Mass. My Lord and My God. It is a humbling experience to believe so deeply, and to be filled with joy.

Lemon Ricotta Italian Pancakes
1-1/2 cups Flour
3 tablespoons Sugar
1 teaspoon Baking Soda
1 tablespoon Baking Powder
1/4 teaspoon Salt
1 cup Milk
2 large Eggs
1/2 cup Ricotta Cheese
1 teaspoon Vanilla
1 large Lemon
Butter for pancakes
In a medium sized bowl whisk the flour, sugar, baking soda, powder and salt. Set aside.
In a second medium sized bowl add the milk, eggs, ricotta, and vanilla. Zest lemon into the wet mixture. Cut the zested lemon in half, add the juice. Combine the wet ingredients to the dry ingredients.





Warm a large skillet or griddle to medium heat. Once warmed, spray with cooking spray. Ladle about a quarter-cup of batter onto the warm surface for each pancake.
Once the edges begin to brown and bubbles form over the surface, carefully flip pancake and continue cooking until golden. Pat with a little butter just before serving.
