Today is National Lighthouse Day. This is the 7th consecutive year that we’ve celebrated my love for Lighthouses on this day. There’s something sad about the light stretching out into the heavy fog and the sound of the lone horn that cuts to the quick of things.
Once upon a time, my bucket list consisted of visiting (and photographing) every lighthouse from the Canadian Border to the tip of Baja California along the western shoreline. We did manage to visit all the lighthouses in California, and all but 2 in Oregon, I have yet to see a lighthouse in the state Washington. Now that we have set our sights on Tennessee as a place to retire and grown old(er) together, I’ll need to create a new bucket list. Maybe visit historic battlegrounds from the Civil War.
No matter, lighthouses will forever have a special place in my heart. To honor Oregon’s many bacons of light, I thought something from Tillamook would be fitting. Without a doubt, there is something special about the cheeses and ice creams made in Tillamook. Their cows must really be happy.
Tillamook Grilled Ham and Cheese Paninis
6 slices Tillamook Aged White Cheddar Cheese
8 oz Deli Smoked Ham
6 slices Tillamook Sharp Cheddar Cheese
Mayonnaise as needed
8 slices Sourdough Bread
Heat Panini Grill. Once warm, brush with butter or oil, close until ready to use.
Cut four sheets of waxed paper to build the layers of ham and cheese. On each sheet stack 1-1/2 slice White Cheddar, 2 oz Smoked Ham, 1-1/2 slice Sharp Cheddar. Repeat for all four sandwiches. Set stacks aside.
Spread mayonnaise on four slices of bread. Top with stacks of ham and cheese. Spray mayonnaise on remaining bread, place over filling mayo side down. Now lightly brush mayonnaise over the sourdough facing up. Open grill, place bread mayo side down, brush more mayo on bread facing up. Close grill, press down lightly and grill sandwiches until golden, with cheese melting.
Remove from grill, cut in half and serve. You’ll need plenty of napkins for this gooey ham and cheese sandwich.
