Sweet Dreams Under the Stars

There are a lot of reasons why having a Dad in the home has an impact on the children. Hubby’s dad died when he was just 2 years old. My father is still with us. I loved to camp growing up. Hubby’s not so much a fan.

It’s all a matter of perspective and experience. As kids we did a lot of camping. Back then it didn’t take much – a mattress to throw in the back of the family stationwagon, a cooler with food and a wide open spot to park.

While Hubby shares my love to be out in nature, he wants a real bed at the end of the day. So do I – even if it’s an inflatable bed on a raised frame. There’s something about the cold night air that lets me sleep more soundly. And that morning cup of coffee while stoking up the campfire just tastes so much better.

When Kiddo was a kiddo, I talked Hubby into camping. My idea of camping had evolved over the years. Our tent had three rooms – a bedroom, a living area and a dining area. There were battery powered lamps, tables, chairs – all the comfort of home. I even had a kitchen sink. The only thing I could not talk Hubby into buying was a camp oven.

These days we are too damn old or spoiled to spend the night on the ground under the stars. So Glamping in more our speed. Still, breakfast is the best thing about a night spent gazing at the stars, don’t you agree?

Cajun Campout One Skillet Breakfast
1 lb Baby Red Potatoes
4 Cajun Sausage Links
1/2 Orange or Red Bell Pepper
4 large Eggs
Salt to taste
Black Pepper to taste

Prep in Advance:
Bring a pot of water to a boil. Scrub potatoes, place in the boiling water. Cook potatoes for about 5 minutes, until almost cooked through.

Plunge potatoes into a bath of ice water to stop cooking process and cool to the touch. At this point potatoes can be placed into a bag and packed away for breakfast at your favorite camp site.

To prep the rest of the ingredients, slice sausage into rounds. Stem bell pepper, remove seeds. Reserve half for another purpose, dice remaining half. Pack with camping provisions.

Morning of:
Heat a skillet over medium heat. Add some lard, oil or a little grease. While the skillet heats, dice the potatoes, season with salt and pepper.

Scatter potatoes into the skillet. Add the sausage and diced bell pepper. Fry until potatoes are golden brown and the sausage is cooked through.

Create four wells in the sausage-potato mixture. Crack an egg into each well. Fry over medium heat until the whites have set. Cover, continue to cook until yolks have reached desired doneness. Season eggs with salt and pepper to taste.

To serve; divide into four servings. Carefully slide a spatula under each egg and lift with as much of the potato-sausage as possible. Plate, arranging remaining potato-sausage mixture around the egg. Serve and enjoy.


Not going camping? That’s okay. Prep the night before, then sit under the stars in the comfort of your own backyard. Sleep in if you want to, finishing breakfast will be a snap.
