Hello Potato Day

In case you haven’t guessed it, today happens to be National Potato Day. Love potatoes – baked, fried, roasted, boiled, mashed or smashed. I can remember as a kid carving potatoes to use as “stamps” for an art class.

Hubby and I are so different when it comes to breakfast. Give him fried eggs and some toast, he’s happy. I need the breakfast meats with those eggs, and all the sides that go with it like skillet potatoes. Growing up breakfast was my favorite meal of the day. But then our suppers were pretty basic – chicken, be it roasted or fried, pot roasts and something starchy with gravy. Breakfast held more of a variety.

Now that Hubby is working remotely from home one day a week, it give me a chance to test drive either a new breakfast or lunch recipe. Once he is retired, except on those days when we are out exploring our new corner of the world (hopefully with a couple of rascally dogs in tow), you’ll find me in the kitchen.

Hubby doesn’t know it yet, but I plan to teach him how to cook. Not that I mind doing all the cooking. I just like the idea of us as a couple of old farts puttering around in the kitchen together. Especially when we don’t have any particular place to go, can take our time and just enjoy the romance of being.

Oh, before we get to cooking – this dish reminded me a lot of a Corned Beef Hash. Don’t know why, it just did. And yeah, it was delicious!

Breakfast Potato Casserole and Buttery English Muffins
1/2 lb Breakfast Sausage
1 cup Minced Ham
1 (20 oz) bag Diced Potatoes
4 large Eggs
1 cup Milk
1 teaspoon Salt
1/2 teaspoon Black Pepper
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1 cup Pepper Jack Cheese
4 English Muffins
Butter for muffins
Jam or Jelly for muffins, optional

Heat oven to 350-degrees. Prepare a baking dish by spraying a 9-inch by 13-inch casserole dish with cooking spray.

In a skillet over medium heat, cook up breakfast sausage, breaking into small pieces as it cooks. Drain well of excess grease. Toss in the diced ham to blend the two meats together.

Spread the diced potatoes out in the prepared dish. Make sure diced potatoes are spread out evenly so every bite has potato.

In a bowl whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined. Gently pour or ladle the egg mixture evenly over the potato layer without disturbing the potato distribution.

Scatter the sausage and ham mixture over the entire casserole. Sprinkle with cheese. Cover with foil and place on the center rack of the heated oven.

Bake casserole covered for 20 minutes. Uncover, increase heat to 450 and continue to bake for another 10 minutes or until heated through, eggs set and cheese is bubbly.

Remove from oven; let rest for a few minutes before slicing. White the casserole is resting, split English Muffins, toast lightly. Butter cut sides, serve alongside the casserole with an assortment jams if desired.
