Bacon Lovers Day

It seems lately we’ve been eating our fair share of casseroles – be it for breakfast or supper. Did you know that although the American housewife is often credited with the popularity of casseroles, the origins of casseroles are much older.

If you were to travel back in time, you would see that the concept of casseroles dates back to ancient times, when dished that would feed a multitude of people were first cooked in clay pots over an open fire. In places such as the ancient Middle East and Mediterranean regions this type of food preparation was common.

As European settlers arrive in America, they brought with them the concept of casserole cooking. By the 20th-century the Church Ladies had perfected casseroles as the stars of community gatherings and potluck parties. The concept of casseroles influenced the development of many other dishes that we typically don’t think of as a casserole such as Lasagnas and Stratas. Yet that is exactly what these are when you get right down to the basics.

Today happens to be National Bacon Lovers Day. The beauty of a casserole featuring bacon is that I can satisfy my Bacon Lover connection while serving my guys with a breakfast that has it all – from toast to bacon and eggs.

Bacon Lover’s Breakfast Casserole
8 slices Bacon
6 Eggs
1 cup Milk
Salt to taste
Black Pepper to taste
4 slices Bread
1 cup Mild Cheddar or Monterey Jack Cheese

Heat oven to 350-degrees. Spray a casserole dish with cooking spray, set aside.

Dice bacon sliced into smaller pieces. Fry in a skillet until crisp and golden. Remove from skillet with a slotted spoon and reserve the bacon renderings for another day.

In a large bowl whisk together the eggs, milk and seasoning. Set aside.

Cut the bread into cubes. Spread bread cubes evenly out in the bottom of the prepared casserole dish. Sprinkle bacon bits and cheese over the bread. Slowly pour egg mixture evenly over the bread mixture.

Bake in the heated oven for about 30 minutes or until eggs have set and the top of the casserole is a light golden brown.

Remove from oven, let cool for a few minutes before slicing to serve. Enjoy bacon, eggs and toasted bread in a whole new way.
