A Salute to a Bacon and Egg Breakfast

Today happens to be Bacon Day. What is it about bacon that most people love so much? It’s more fat than meat. And oh so salty. Yet we can’t seem to get enough bacon.

Bacon on our salads. Bacon as a side. Bacon on our pizzas and burgers and wrapped around hot dogs. We even like to wrap bacon around Filet Mignon. While we hardly think of bacon as Chinese, we can actually thank China. They first began to cure pork belly in salt around 1500 BC. Even the Greeks and Romans ate bacon. Once cured, it traveled well, which was important before modern refrigeration and easy of travel.

The bacon we know and love today is very different than the salt-cured pork bellies of ancient China. I for one can never get enough bacon. How ‘bout you?

Four-Egg Bacon Breakfast Sandwich for Two
4 slices Bacon
2 Eggs, scrambled
Salt to tste
Black Pepper to taste
3 tablespoons Butter, divided
2 Eggs, fried
4 slices Sourdough Bread
Arugula, optional

Heat oven to 250-degrees. Place two plates in the oven to warm.

In a skillet over medium heat fry bacon until crisp. Hold bacon in the oven, wrapped in foil, until ready to assemble the sandwich.

Toast bread, lightly butter. Remove warm plates from the oven; place two slices of buttered bread on each plate. Return to the oven to keep warm until ready to assemble.

In a small bowl, beat 2 eggs. Season with salt and pepper. Melt a tablespoon of butter into a small skillet, scrambled the eggs, Keep warm. In the skillet used to fry the bacon, fry 2 more eggs in the bacon drippings to desired doneness, with firm white and soft or runny yolks. Season fried eggs with salt and pepper. Remove from heat.

Remove everything from the oven. If using the Arugula scatter a handful as desired over the bread. Next divide the scrambled egg between the sandwiches. Top scrambled egg with bacon, broken in half if necessary for a better fit. Top bacon with a fried egg. Close the sandwich with remaining toasted bread. Slice to allow yolk to drip into the bread. Serve and enjoy.
