Spicing up a Tuesday Morning

It’s been one of those months from hell. Every little thing that could go wrong has. Lord, if this is a test, I think I’m about to fail.

While on our mega road trip, a rock from a passing car flew up and cracked our windshield. It wasn’t just a tiny knick, it was a small hole with small spider-web cracks. We were forced to get one of those do-it-yourself kits to make emergency repairs. Once home, we had the “pros” fix it. They did their best, but with some of that do-it-yourself gunk in the hole, it’s not a perfect repair.

Once home, we discovered that the AC unit in our house had given out. The fan motor (critical if you want the cold air from the AC to actually come in through all the vents) was officially dead. And on a Sunday no less! The management people were able to get someone out the next morning, so we were only without AC for a night. Oh but what a night – it was 100 degrees in the house, with no way to cool it down much.

Fast forward a month. The AC quit blowing yet again. Of course that had to happen over Labor Day Weekend. We were able to get the management company to send out a repair crew. They determined it was a circuitry board inside the unit. Naturally with the holiday, the part could not be ordered for three days. Thank God, the highs for those three days were in the mid to upper 80s. Not the greatest time to be without an AC, but survivable.

I am under doctor’s orders to take my blood pressure twice a day, keep a log and let her know my readings once a week. We are keeping an eye on things due to a recent change in medications. So naturally, the blood pressure cuff I’ve had for years decided now was the time to die. It had to be replaced. It’s not that a new cuff was a big deal, or even a big expense, just a pain to run out and get one.

This morning our lawn sprinklers decided to blow it’s top – shooting one of the sprinkler heads into orbit. You know what they say – when it rains, it pours. I guess what I really need to remember is that these are all little things. Breath deep, thank God for yet a new day and trust that all is as it should be.

That’s my rant for this month. I say let’s begin this new day with a nice, simple breakfast. After all, every morning is a fresh start.

Crunchy Chorizo Breakfast Wraps
4 frozen Potato Hash Brown Patties
Salt to taste
1 lb Chorizo
10 large Eggs
Black Pepper to taste
Spicy Olive Oil as needed
4 Jumbo Flour Tortilla Wraps

Heat oven to 400 degrees. Lightly oil a baking pan. Place potato patties on the baking pan, season with salt. Bake potato patties according to package directions, turning half-way through. Keep warm.

In a large skillet, crumble chorizo. Cook about 10 minutes, breaking up the meat as it browns. If necessary, drain excess grease from the skillet. Scramble in the eggs, season with salt and pepper. Cook to desired doneness. Keep warm.

Drizzle oil in a large skillet. While the oil heats, lay out tortilla wraps. Place a potato patties in the center of each wrap. Top with a quarter of the chorizo-egg mixture. Fold wrap around filling.

Grill, folded side down, until golden. Turn, grill another few minutes until golden. Serve and enjoy.
