Today is National North Carolina Day. Now I’m not going to bore you with all the facts and figures of the Carolinas. I am going to tell you that in just over a year or so from now (fingers crossed), Hubby and I will call Tennessee home.
When we do, it will open up a whole new realm of adventure. One of my favorite movies was the 1999 romantic drama Message in a Bottle. The film featured Kevin Costner, Robin Wright and Paul Newman. It also featured an un-credited supporting role, the Outer Banks. Ever since that movie, I have entertained romantic visions of exploring the Outer Banks with my love. Soon that idea might just become a reality. Once in Tennessee, North Carolina’s outer banks is just a day’s drive away. And by then Hubby will be retired, so we could spend a few days exploring the outer banks whenever the mood struck us. I can just see us now, walking hand in hand, with our dogs gallivanting about.
Today also happens to be Strawberry Cream Pie Day. This is a cooking blog. So I thought today would be the perfect day to try a new No-Bake recipe. Hope you enjoy. And remember always, God loves you.
Creamy Strawberry Cream Pie
Graham Cracker Crust
10 to 12 whole Graham Crackers
4 tablespoons Sugar
6 tablespoons Butter
In a food processor crumble Graham Crackers with the sugar. Empty crumbs into an 8-inch pie pan.
Melt butter, pour over crackers. Press mixture over the bottom and up the sides of the pie dish.
Chill crust in the refrigerator while the filling is prepared.
Strawberry Cream Filling
1 cup Water
1-1/2 cups fresh Strawberries
1 (3 oz) package Strawberry Flavored Gelatin
1-1/2 cups Heavy Cream
1/3 cup Powdered Sugar
1/2 teaspoon Vanilla Extract
Bring water to a boil. As the water comes to a boil, clean, hull and roughly chop the fresh strawberries. Set berries aside.
In a medium bowl whisk gelatin with the boiling water until gelatin is completely dissolved. Set gelatin aside to cool and thicken.
In a stand mixer fitted with a whip beat heavy cream with powdered sugar and vanilla until stiff peaks form. Add thickened gelatin to the whipped cream, fold in gently. Fold in the strawberries.
Spoon filling into the pie crust, smooth out top. If desired, garnish with a few whole strawberries. Refrigerate at least 4 hours before serving.

Slice chilled pie and plate on individual dessert plates. Finish with a little whipped cream and a slice of strawberry just before serving. Enjoy!
