Today is National Dessert Day. Have you ever wondered just what the heck constitutes a dessert in the first place? Are there rules? Here’s what AI had to say:
Dessert is the sweet course typically served at the end of a meal. It encompasses a wide variety of foods, including cakes, pastries, ice creams, and fruit dishes, designed to provide a delightful conclusion to the dining experience. Desserts are characterized by their flavors and textures, often featuring sweetness and richness that contrast with the savory courses that precede them.
Hum, so malted waffles topped with peanut butter and drizzled with bourbon maple syrup could be a dessert, IF served at the end of the meal. Now I’ve got to tell you, one of the best things about the south has to be the existance of Waffle House. Drive through the south and it doesn’t seem to matter if a town as a population of 10 or 10 million, they’ve got at lease one Waffle House. They are open 24 hours a day, 7 days a week. Seems there is no right or wrong time to have waffles in the south. And if that is the case, then there should be no right or wrong time to have dessert.
I don’t care what anyone says, I am having waffles for dessert. And I’m not waiting until the end of the day or the close of a meal to do so. Who’s with me?
Golden Malted Waffles with Peanut Butter Chips
2 cups Carbon Malted Waffle Mix
4 tablespoons Butter
10 oz Milk
2 Eggs
1/2 tablespoon Malted Powder (optional)
1 tablespoon Vanilla Extract
Butter as desired
Syrup as desired (Bourbon or otherwise)
2 cups Peanut Butter Chips
Add waffle mix to a medium size mixing bowl. Melt butter, drizzle over mix.
Whisk in milk, eggs, malted powder and vanilla extract until smooth. Heat waffle iron according to manufacture’s instructions. Once hot, ladle a quarter of the batter into the waffle iron, close lid and bake according to directions.
Remove waffle, serve with butter, syrup and about a half cup of Peanut Butter Chips. Let the residual heat of the waffles melt chips. Repeat with remaining batter.

Note: Waffles may be served as each waffle comes off the iron or placed in a warm oven to serve family-style.
Those who follow you, Lord, will have the light of life.
