Do you have a favorite season? Mine by far has to be fall. I could go on and on about the crispness in the air, the colors of the leaves, the sounds of birds flying by. There’s the smell of wood burning fireplaces and the feel of wrapping up in a sweater.

Morning in Rhode Island
Today is National Rhode Island Day. This might just be one of the last times I’ll use National State Days as inspiration for my posts. I’ve been doing this for a few years now as a way to promote our amazing country without all the political rhetoric. It’s getting to be time to move on . . .

Years ago, in a prior lifetime my best friend and I went to the movies to see Stigmata. Our children were in preschool together and we had some me-time on our hands. For reasons I cannot explain, the movie freaked us out.
Continue reading “On This Feast of Francis”Gorditas Round Two
Hey there, do you remember my first attempt at Gorditas? The taste was there, but the Gorditas were too thin to puff up properly and create those much needed pockets for filling. So here we go again – same number of Gorditas created from even more dough.

All you need do today is to turn on the news and the world seems to have lost sight of its humanity. Hate leads the way and clouds our minds. Now more than ever before, we need to seek out our protectors. Each of us, before we were even born, were given an angel of the Lord. Fear not.
Continue reading “Have Supper with Guardian Angels”The Little Rose and Home-Baked Cookies
We haven’t talked about the Little Flower (Saint Theresa of Lisieux) since the Pandemic of 2020. I think it’s time we talk about her again. Saints are people – just ordinary people who eventually surrender to God’s will alone.

I love the fall. It’s my favorite season. Living where we do, surrounded by miles and miles of orchards, the colors of fall are beautiful. While we don’t come close to the fall colors of New England, the sprinkling of reds and yellows are nice.

Once upon a time, the Church celebrated three separate feast days for the most prominent of the seven Archangels; Gabriel, Michael and Raphael. Of these three, only Michael is mentioned by name in three major religious writings; the Torah, the Koran and Holy Scripture.

Today we celebrate the state of North Carolina. Rather than look at the state as a whole or talk about strange laws, I thought we’d spend some time roaming the Outer Banks.

On a bright Summer Sunday not very long ago, I jokingly asked our Pastor if I could order a nice steak on Friday for our wedding anniversary and just say a Rosary as penance instead. His answer surprised me.

Now that the days are cooler (although upper 70s to lower 80s isn’t exactly “cold”), I am getting things done around the house. The fall cleaning and organizing in particular. My guys never know what they might come home to find.
Continue reading “Yummy One Dish Magic”No Lobsters Here
Today is National Lobster Day. It’s been a very long time since I’ve enjoyed a full lobster. Oh sure, we’ve had lobster tails, but it’s been a while since we’ve had the whole crustacean.
Continue reading “No Lobsters Here”One Terrific Taco Tuesday
What’s this – yet another Taco Tuesday? You bet! If there is one thing oh so popular in our house, it’s the Mexican staple – the taco. It’s a good thing I love to cook for my family. Most of what I make is so much better than anything we can get in a restaurant. The only reason to eat out is that someone else does the dishes.

It’s been a hot minute since we’ve cooked up anything with that Cajun New Orleans flavor. I love spicy foods. Each ethnic collection of spices has its own unique profile.

There’s something about this time of the year that seems almost magical. The days are still pleasantly warm, while the nights are cooler. Oh yes, it means sleeping with the windows open. Fresh air at long last.
