Friday Night Cinco de Mayo Feast

Welcome to the 5th day of May – better known as Cinco de Mayo. It is a celebration of Mexican Pride, Mexican Culture and Mexican Cuisine. You would think it were their 4th of July, but it isn’t. As a matter of fact, Cinco de Mayo isn’t even a major holiday in Mexico.

Cinco de Mayo and More

We all know what day it is – the 5th of May. Just as everyone suddenly becomes Irish on March 17th, American embrace all things Mexican on May 5th. After all, it’s Cindo de Mayo.

A Chipotle Kissed Cinco de Mayo

Just as Saint Patrick’s Day brings out the Irish in all of us, Cinco de Mayo has a similar cultural effect. Instead of pints, we consume shots. Instead of Corned Beef, it’s tacos. Just as most of the newly born “Irish” of Saint Patty’s Day have no idea what they are celebrating, most think Cinco de Mayo is Mexico’s 4th of July.

Primer Lunes de Septiembre

Tomorrow is the First Monday of September. Wow – September already! The first Monday means tomorrow is Labor Day. And Labor Day signals the unofficial end to summer. A summer that never was in the first place.

Velvety Queso Taco Pockets

We’ve talked about Hubby’s love for meaty pies. And his love for Mexican food. This awesome dish bring two of his favorites together. And I gotta say, Kiddo and I were right there with him. After all, it’s Tequila Tuesday, right?

More Cinco de Mayo

Honestly, it was not my intention to share yet another Three-Course Cinco de Mayo collection of recipes. I mean, I already gave you one Three-Course Menu, plus I gave you a million ideas with my Create Your Own Fiesta Feast posting. Okay, maybe not a million, but there were a lot of recipe links to choose from. Yet here I am, with more recipes in hand.

South of the Border Deviled Egg Platter

deviled egg trayDo you have those Deviled Egg Trays that have a big, round circle in the middle? I’ve often wondered why it’s there. You aren’t going to place a bowl of dip in the middle of a platter of deviled eggs, are you? Do you fill it with greenery to make the dish pretty or just leave it alone? Whenever possible, I like to put something in the center, depending upon the style of egg. These south-of-the-border eggs went very well with another great appetizer, Stuffed Mini Peppers. You can put just about anything you like, or leave the center plain. Now if you are using a more modern deviled egg platter, chances are the center isn’t an issue.

Cinco de Mayo Three Course Celebration

For those of you who have been following me, you know how much I love to put together complete menus – especially for the “holidays”. May is a month filled with special days – beginning with Cinco de Mayo (the 5th of May); then Mother’s Day and finally Memorial Day – the official kick off of the summer cooking season.

Creating Your Own Fiesta Feast!

As we say farewell to April Showers and turn our attention to May Flowers; the first of the May “Feast” days is just beyond the horizon. Cinco de Mayo –  the 5th of May. Some people think this date equates to America’s 4th of July. While I knew it wasn’t Mexico’s Independence Day, I did not know the real history of the date. How is it that so many people celebrate “holidays” without knowing the history or significance of the day? I know I’m guilty of celebrating Cinco de Mayo with a feast of tacos, Margaritas and a host of other things without knowing why. Living in California, a state that once belonged to Mexico, with a large Mexican population, you would think I might have some idea of the history. This was an error I intended to correct . . .

Fiesta Chicken-Chorizo Tacos

These yummy tacos were featured as part of last year’s Cinco de Mayo Feast. While great for the occasion, tacos this good are awesome any time. Can you tell, rather than have a day celebrating all that is Mexican through foods, I’d like to have an entire month dedicated to the exploration of Mexico’s culinary delights. Wouldn’t that be great?

Fiesta Cinco de Mayo

Here it is, the second day of May and Cinco de Mayo (the 5th of May) is just around the corner. Let’s face it, Cinco de Mayo is always a good excuse to serve up a wonderful South of the Border feast. Like Saint Patrick’s Day, here in American Cinco de Mayo is a celebration embraced by all. This year, Cinco de Mayo falls on a Saturday – that means a day to party and a day to recover before the reality of Monday comes.

Be it Cinco or Seis de Mayo – It’s a Family Celebration!

This year, our celebration is going to be a real family affair – my sister with her family of five, my Dad and his wife, and my son with his family of three. That means catering to the tastes of adults and children alike. We all know what that means.
