This original recipe was inspired by a recipe I found at Taste of Home for Ravioli with Italian Sausage. Their recipe looked yummy. Cheese Ravioli, Italian Sausage, a meatless Pasta Sauce, chopped green bell peppers and Parmesan Cheese – what was not to like? I put it on my meal planner. Yeah, a quick weeknight supper. And it wouldn’t overheat our cozy kitchen on a warm summer night.
Along came shopping day. Cheese ravioli was on the list. Hubby, with shopping list in hand, rattled off something about not having cheese ravioli as he checked the freezer. Did it need to be cheese. Hum, good question. (We like to shop Costco, stocking up and cooking accordingly). My reply was that whatever we had in the freezer would be fine.
Again, Hubby checked the list. Does it need to be Italian Sausage? Hubby had moved inside now, peering into the deli drawer of the refrigerator. Will a package of Garlic Sausage do? Hum, another good question. Sure, garlic sausage would be fine.
As for the Parmesan Cheese, that was a gimme – we always have Parmesan Cheese on-hand. Bell Peppers are another household stable.
The night arrived when I was to whip up Taste of Home’s Ravioli with Italian Sausage. As we drove home from a day of running errands in the grid-lock bumper-to-bumper traffic, I thought about supper. We had all those yummy sweet little tomatoes left from my Refreshing Compressed Watermelon,Tomato and Goat Cheese Salad that I wanted to put to use. And plenty of fresh basil in the house. As I walked into our kitchen, I was feeling a bit creative. The results were delicious. Fresh, colorful and oh so good.
Pasta Prima Ravioli
1 Package Ravioli (Pasta Prima Grilled Chicken & Mozzarella)
1 Package Smoked Sausage (Evergood Garlic Sausage)
1 Jar Marinara Sauce (Classico Cabernet Marinara)
1 Cup Grape Tomatoes (assorted)
6 Fresh Basil Leaves, ribbon cut
Bring a large pot of water to a boil. Add salt and maintain rolling boil until ready to use.
Cut Sausage into rounds. Drizzle a little olive oil in a large skillet. Heat over medium-high heat. Add sausage rounds and saute until sausage is nicely browned.
Cut Tomatoes in half. Set aside. Stack basil leaves, roll into a cigar and cut into ribbons. Set aside.
Add marinara sauce to skillet. Warm over medium heat. While the sauce is warming, cook ravioli according to package directions.
While pasta is cooking, add cut tomatoes to marinara sauce. Stir to blend. Lower heat, and simmer until pasta is cooked
Drain pasta, divide among individual plates. Top pasta with marinara-sausage mixture. Sprinkle with fresh basil and serve.
