Cajun Chicken Tenders with Creamy Dipping Sauce

If your family is anything like mine, now that nice weather is here, the weekends are crazy!! Things to do, places to go, sights to see. This coming weekend alone, we have a two-day Chocolate Festival, Jumping Frog Jubilee, two different Classic Car Shows, three antique street fairs and one of the largest farmer’s markets in the state. That’s a lot to pack in over a single weekend.

Naturally, we cannot possibly attend everything. Oh how I wish we could, but that would be crazy. Hectic schedules make for difficult meal planning. Oh sure, we could fill up on junk at one of the many fairs or stop in at a diner on the way home from one of the classic car shows. Who could blame us? I don’t know about you, but hanging around a bunch of beautifully restored ’57 Chevys while moving to Rock Around The Clock makes me long for Mel’s Diner. And it just so happens that there’s a Mel’s just up the street from the Hangtown Classic Car Show. But then again, been there done that last time around. What we could do is to plan for something that is quick, effortless and easy once we get home. Put our feet up, nibble on some finger food and talk about what an awesome day’s adventure was had by all.

Cajun Chicken Strips with Creamy Dipping Sauce
Cajun Dipping Sauce
1/4 cup Sour Cream
1/4 cup Mayonnaise
1/4 cup Ketchup
1/2 teaspoon Garlic Powder
Salt to taste
Cajun Seasoning to taste

To Make Dipping Sauce
In a small bowl, mix together the sour cream, mayonnaise, ketchup and garlic powder.

Season with salt and Cajun Seasoning to taste, adding a little at a time and blending between additions.

Cover and refrigerate until ready to use.

Chicken Strips
1 1/4 lb Chicken Breasts

To Make the Cajun Chicken Strips
Heat oven to 500 degrees. Line a baking pan with foil and spray with cooking spray, set aside.

Cut chicken breast into strips about an inch or so wide. Spread chicken out onto baking pan. Set side.

Cajun Spice Mix
1/2 tablespoon Salt
2 teaspoons Garlic powder
2 teaspoons Onion powder
1 tablespoon Cajun spice
1/2 tablespoons Smoked Paprika
1 teaspoon Oregano
1 tablespoon Water
1 tablespoon Olive Oil

To Cook the Cajun Chicken Strips
Stir all the ingredients for the spice mix mixture together in a small bowl until it reaches the consistency of a thin paste. Brush Cajun paste over the chicken strips. Turn over, brush again.

Roast chicken strips in the heated oven for about 15 to 18 minutes, or until chicken is cooked through.

To serve, place the dipping sauce in the center of a large serving platter. Arrange the chicken strips around the sauce and serve.
