Sausage Omelette Burrito

Do you ever just drift off while standing in front of the open refrigerator door, wondering just what to make for breakfast in the morning? I’ve found myself doing just that more times than I can count. After Cinco de Mayo, I found Chicken Fajita Omelettes were an interesting way to use up some left overs. Now I had tortillas to deal with . . .

Having tortillas to deal with is nothing new and has nothing to do with Cinco de Mayo. Be it home-made or store bought, we always have tortillas in the house, much like some people keep bread. Sometimes when I want a simple snack, I’ll warm up some tortillas and have them with cream cheese. Other times I’ll wrap some lunch meat in a tortilla for a light lunch.

I was in the mood for something, but I didn’t know what. I didn’t want scrambled eggs with bits of sausage. I really didn’t want a plain omelette either. Yet I was in the mood for both. It was Kiddo’s day off. Just the two of us for breakfast, so we could do something strange or wild or just different. Omelette Burritos sounded like just the ticket.

Sausage Omelette Burrito
2 Link Sausages, cooked
2 Eggs, beaten
Salt to taste
Pepper to taste
1/2 tablespoon Butter
1 Flour Tortilla, slightly larger than the omelette pan, warmed
1/4 cup Mozzarella Cheese

Cook sausage in a small skillet over medium heat until cooked through and nicely browned, about 7 to 8 minutes, turning as needed to prevent burning. Remove from skillet, let cool on a cutting board. Once sausages are cool enough to handle, cut into bite-size pieces.

Whisk two eggs in a bowl with salt and pepper. Set aside.

Wipe down an omelette pan or small heavy bottom skillet with a little butter. Heat over medium heat, rotating the pan to heat the bottom as well as the sides. Let heat empty for a minute or two.

While the pan is warming for the omelette, warm the tortilla. If using a gas stove or glass top stove, place tortilla directly on a warm burner, turning every few seconds until warm and easy to roll. If an electric stove, warm in a skillet. Set warmed tortilla aside on a plate.

Pour eggs into the skillet. Let sit for a minute or two, just to begin to set, then shake and rotate the pan to keep the eggs moving, and coming up the side of the pan just a little. Continue to move the pan while the eggs set. When the eggs are almost set, push down the sides and rotate the pan so any uncooked egg mixture slides under the cooked eggs. Continue this process until the eggs are no longer runny.

Sprinkle sausage over one-half of the omelette. Top with cheese. Fold omelette over onto itself, then gently roll out of the pan onto the tortilla lined plate.

Roll Tortilla up around the omelette, serve and enjoy.
