Inspiration can be found all around us. A few Saturdays ago, Hubby, Kiddo and I did a little errand running. I needed to stop off at World Market for some pasta and Advent Calendars. Every year we give my sister’s children each an Advent Calendar that has a piece of chocolate to count down the days until Christmas. It’s something we do at Thanksgiving to ring in the Christmas Season.
We also made a quick stop at Costco, since the two stores share a parking lot. I don’t know about you, but I can’t make it from the front door of Costco to the meat section at the back end of the store without grabbing a few non-necessary items on the way. While passing through the bread area, Kiddo and I grabbed some French Baguettes to use as dipping breads for the latest additions to our Balsamic Vinegar Collection. It was then that I saw a package of French Brioche Rolls. They were these cute 4-inch sweet rolls that looked like small hot dog buns.
When I grabbed the rolls, I had nothing in mind to make with them. I just knew these rolls would come in handy for something. After all, these sweet bread rolls were from La Boulange Bakery in San Francisco. They were one of my favorite French Bakeries in the city. Unfortunately, Starbucks bought out the bakeries and closed all 23 locations. Now the only way to get their delicious breads is to stumble upon them here and there in the bread aisles.
As it turns out, these sweet Brioche Rolls make for one delicious, warm and toasty sandwich.
Toasted Brioche Chicken Club Sandwich
6 French Brioche Rolls
3 slices Bacon
3/4 cup Mozzarella Cheese, shredded
6 slices Rotisserie Seasoned Chicken
3 tablespoons Butter
Lay Brioche Rolls on a baking sheet and set aside. Heat oven to 400 degrees.
Cut bacon slices in half to create 6 short slices. Fry bacon over medium heat to desired crispness. Place on paper towels to drain.
While the bacon cooks, sprinkle rolls with about 2 tablespoons each of the shredded Mozzarella. Fold each slice of chicken meat to just fit on the bottom slice of each roll. Press down to hold fold.
Place bacon on top of chicken. Melt butter in a microwave safe bowl. Drizzle melted butter inside each sandwich roll.
Close rolls. Place in the heated oven for about 3 or 4 minutes to “warm”, just long enough for the cheese to melt.
Serve and enjoy. Perfect with a small salad.
