This is one of those been there, done that tales. With a fresh cup of coffee in hand, I stood in front of the open refrigerator. I was hungry, but I didn’t know what I was hungry for. Pulled open drawers, moved things around on shelves. Hum, something light and warm and easy. The light began to flicker.
Hum, slices of Pepper Jack Cheese. A mushroom. Left-over cubed ham from Sunday’s scrambled eggs. Part of an onion. A couple of eggs. Yep, everything needed for a quick yet satisfying Breakfast Omelette. Let’s get to cooking, shall we?
Quick and Easy Ham Omelette
1/2 cup diced Ham
2 White Onion Slivers
1/2 White Button Mushrooms
1 slice Pepper Jack Cheese
2 Eggs
Pinch Kosher Salt
Cracked Pepper to taste
Olive Oil as needed
Butter as needed
Place the diced ham on a cutting board and finely mince with a chopper. Set aside.
Slice two thin slivers from the white onion from root to tip. Finely dice and set aside.
Cut a large mushroom in half. Cut the half into thick chunks, then mince with a food chopper. Set aside.
Cut a slice of Pepper Jack Cheese into small cubes and set aside.
Beat eggs with a pinch of salt and cracker pepper to taste. Set aside.
In a small sauté pan, head just a drizzle of olive oil over medium heat. Add the ham, onion and mushroom to the pan. Sauté ham mixture until heated through. Keep warm.
In a small crepe or omelette pan, melt just a dab of butter over medium-low heat. Swirl pan to spread out the butter.
Pour beaten eggs into the pan. Swirl to spread the eggs. Cook over low heat, shaking and swirling the pan to allow eggs to set without browning.
With a silicone spatula, gently push the omelette toward the center, allowing the uncooked egg to run toward the edge. Repeat until all the egg has set.
Spoon the ham mixture onto half of the omelette. Top with the cubed cheese. Gently fold the empty side over the filled side.
Transfer to a warm plate and enjoy.

This looks like a perfect omelet, not all browned up! I think they are a perfect meal any time of day –– you get to use what you’ve got on hand, and glue it all together with cheese!

Nice! Sometimes staring into the refrigerator can be like trying to read the Rosetta stone. I believe the cup of fresh coffee may have been your key to unlocking its secrets!
