Easy French Toast Cinnamon Sticks

Did you know that today is National French Toast Day? Like we need a reason to make French Toast! This year, it also happens to be Thanksgiving. We all know what that means – craziness in the kitchen.

The last thing you want to do on a busy day is cook more food. Equally unwanted is the idea of skipping breakfast. Okay, as a family we don’t sit down to the breakfast table as much as we should. But on holidays, we manage to make the time even if things are a bit crazy.

I can remember a time many years ago when we drove 10 hours each Thanksgiving to spend the holiday at the family farm. In the wee hours of  Thanksgiving morning, Hubby would stop at one of those fast-food joints that line the highway. We’d order some French Toast Sticks. After all, these were easy enough to eat while barreling down the highway.

Today, we still love our sticks on Thanksgiving morning. Only now, we make them at home. So easy and so delicious.

Easy French Toast Cinnamon Sticks
8 Slices Texas Toast
4 Large Eggs
1 Cup Heavy Cream
2 1/2 teaspoons Cinnamon
1 Teaspoon Nutmeg
1 Tablespoon Sugar
1 Tablespoon Vanilla Extract

In a blender, whip together the eggs, heavy cream, cinnamon, nutmeg, sugar and vanilla. (Batter can be made in advance, kept in the refrigerator overnight). Let batter rest, then pour into a small casserole dish large enough to hold mixture and allow dipping of the bread sticks.

Cut each slice of Texas toast into four sticks.

Dip each piece of bread in the egg mixture, turning to coat it on all sides so that it’s well-saturated with the custard.

Shake off any excess and place the coated bread on a large plate or baking dish. Repeat the dipping process with the remaining pieces of bread.

Heat a large sauté pan over medium heat and add 2 to 3 tablespoons of butter. Once the butter has melted, place several of the coated sticks in a single layer in the pan. (Do not overcrowd the pan.) Cook until golden brown on one side then flip and continue cooking until the sticks are golden brown and slightly crisped on all edges.

Cinnamon-Sugar Dusting
1/4 cup Sugar
1/2 teaspoons Cinnamon

On a small plate, blend sugar with the cinnamon.

Once the sticks are cooked golden, immediately roll in the Cinnamon-Sugar. Serve with maple syrup for dipping.

French Toast Sticks

Note: Sticks can be made in advance, allowed to cool. Wrap stick in plastic wrap, then store in the refrigerator or freezer.

To reheat, lightly spray a baking pan with cooking spray. Heat oven to 350 degrees and bake sticks in the oven until heated through.
