Once upon a time in America, the only thing open on Thanksgiving were grocery stores, and only in the morning for all those last minute Thanksgiving emergencies. I don’t know about you, but I’ve had a few. Forgot the butter for the rolls. Forgot the yeast for the bread or the whipped cream for the pies.
These days, Thanksgiving isn’t what it use to be. Spending time with family has lost its appeal. Spending Thanksgiving staking out a spot in line for the Black Friday madness seems oh so important. We can thank Madison Avenue for that, feeding into our need to be first; to give the best and to save a buck in the process. I have never given up family time for shopping. But who am I to judge?
So what does all this ranting have to do with cookies? Nothing and everything. Let’s just suppose for a moment that you forgot treats for all those nieces and nephews or grandchildren that will soon descend upon you clamoring for something sweet? Or you are going to a Friendsgiving and forgot you were in charge of the dessert. Have no fear, these delightful cookies are here to save to day. It’s sure a good thing the neighborhood grocery store is open and waiting.
50 Mini Nilla Wafer Cookies
50 Milk Chocolate Hershey’s Kisses , unwrapped
1/2 cup semisweet Chocolate Chips
1/4 teaspoon Shortening
50 mini Chocolate Chips
Line a baking sheet with parchment paper. Set aside. On a flat work surface, arrange Wafer Cookies, flat side up. Unwrap the Candy Kisses, place in a bowl. Keep the prepared pan, the cookies and the kisses in easy reach of one another to create an assembly line.
In a small microwave safe bowl, melt the semisweet chocolate chips with the shortening in the microwave for about 30 seconds; stir until smooth. Continue microwaving in 15 second intervals, if necessary. Using a spatula, transfer melted chocolate to a small Ziploc bag; snip off a tiny corner.
Pipe a small amount of the chocolate onto the flat side of each cookie and immediately press a Hershey’s kiss on top to attach it. Place on the prepared baking sheet, cookie side down, and repeat with the remaining cookies and kisses; place in the freezer for 5 minutes to set.
Pipe a small dab of the melted chocolate onto a mini chocolate chip and attach it to the top of the wafer to create the stem.
Place finished cookie back onto the baking sheet and repeat with all the acorns. Freeze for another 5 minutes to set completely.
Arrange cookies on a platter to add to the desert table.
