Are you a fan of corn dogs? I love them. Have you ever made corn dogs at home from scratch without a deep fryer? Mine have been less than I had hoped. The batter, although delicious, tended to slid off the dog. Scratch from-scratch corn dogs off my list.
However; these Corn Dog Muffins are awesome. They are little bites of cornbread goodness with a bite of hot dog inside. The first time we had these little delights, Kiddo made them. It was over an hour between the time the muffin tins were filled to when they were baked. I don’t know what effect that had, but these little muffins baked up to perfection. In a snap, all 24 were gone. You didn’t even need ketchup or mustard or any sort of dipping sauce. They were delicious all on their own.
The second time we made them, we used an instant mix, as in add water to the dry mix and that was it – no milk, no eggs. Just water. Big mistake. Jiffy Corm Bread Mix makes all the difference in the world.

Mini Corn Dog Muffins
Cooking Spray as needed
2/3 cup Milk
2 boxes Jiffy Corn Bread Mix
3 Bun Length All-Beef Franks from a package
Spray the cups of a 24-cup mini muffin tray and set aside.
In a large bowl, whisk together the eggs and milk. Add Corn Muffin Mix, stir until incorporated fully. Allow the batter to rest for 5 minutes. Meanwhile, cut franks into 24 bite-size pieces. Set aside.
Using a small cookie scoop, place one scoop of batter into each mini muffin cup until no batter remains. Place one hot dog slice in the middle of each filled muffin cup. Cover until ready to bake.
Heat oven to 375 degrees. Bake corn dog muffins for 8 to 10 minutes. Remove from oven, run a knife around the edge of the mini cups to loosen them and carefully lift out of the tin. Arrange on a serving platter and serve warm.
While these corn dog muffins could be served with ketchup or mustard for dipping as you would a deep fried corn dog, these muffins are delicious all on their own. If you really want to make something awesome for a casual family night, serve with bowls of chili. Yum!
