National Cheese Lover’s Day and Spicy Cheese Pinwheels

Today is National Cheese Lover’s Day. To honor the day, we should be talking about the rich history of cheese, or how Americans have awakened their senses with gourmet cheeses. Yeah, there’s more to cheese than a block of Velveeta!

Unfortunately, that’s not really where my mindset is at these days. The Super Bowl is coming – the biggest food day of the year in our house. So in the spirit of Cheese Lover’s and Football Fans everywhere, I give you the best of both world. Cheese that football fans would eat!

Spicy Cheese Pinwheels
3/4 cup Green Onions
1 large Jalapeño Pepper
1/2 cup Mild Cheddar Cheese
1 cup Sour Cream
8 oz Cream Cheese, softened
1 tablespoon Lime Juice
10 Flour Tortillas (8 inches), room temperature
1 jar Commercial Picante Sauce

Trim the root ends from the green onions. Slice the remaining onion finely, then set aside. Stem the Jalapeño Pepper, split open to remove some or all of the seeds. Finely dice the pepper, then set aside.

Using the small holes of the cheese grater, finely shred the Cheddar Cheese into a bowl. Remember, freshly shredded cheese will blend more smoothly. Add the sour cream and cream cheese. Stir until smoothly blended. Add green onions, peppers and lime juice. Stir to blend. Working with one tortilla at a time, spread the cheese mixture out to cover the tortilla in a thin layer. Roll up the tortilla tightly. Wrap in plastic wrap, tucking the ends of the wrap under the tortilla roll to help secure. Place on a rimmed baking sheet. Repeat until all the tortillas are filled and rolled. Refrigerate for at least 1 hour, or up to overnight.

When ready to serve, unwrap from the plastic wrap, trim the ends then slice each rolled tortilla into 1-inch pinwheels. Arrange as desired on a serving platter and serve with Picante Sauce for dipping.
