Buffalo Spicy Chicken Tenders

While these Chicken Tenders might not look like your typical Buffalo Spice Chicken, believe you me they bring on the heat. There’s heat in the flour coating, buttermilk dip and Panko breading.

A while back, we held a Celebration of Life for our daughter at the family farm. While I know such gatherings aren’t the same as a family barbecue with tons of food, I didn’t want anyone going hungry.

We served up 5 pounds of Sloppy Joes, 4 pounds of Rigatoni with Meatballs and another 4 pounds of Spaghetti. Can’t have Italian without warm bread. And then there were the salads – Caesar, Macaroni, Potato and Pasta salads. Several dozen cookies and some brownies rounded out the buffet tables. Could not have done all that without Kiddo. He did it all.

Needless to say, we were eating leftovers for days. What better way to use up all that Potato Salad than to serve it alongside some spicy chicken strips? Wow, what a simple supper on an unseasonably warm Autumn evening.

With all the cooking we’ve got ahead of the Thanksgiving Holiday, something this simple is oh so welcome, don’t you think?

Buffalo Spice Chicken Tenders
Olive Oil as needed
3 boneless Chicken Breasts
1/2 cup Flour
1/2 teaspoon Cayenne Pepper
Salt to taste
1/2 cup Buttermilk
1/4 cup Milk
1 Egg
3 teaspoons Hot Pepper Sauce
2-1/2 cups Panko Breadcrumbs
1-1/2 teaspoons Slap Yo Mamma or other Cajun Seasoning
Cooking Spray as needed
Ranch or Blue Cheese Dressing as desired

Heat oven to 425 degrees.

Cover baking sheet with foil. Pour olive oil onto foil-lined baking sheet to lightly coat entire surface.

Cut chicken into 1-inch wide tenders. Set aside.

Combine flour, cayenne pepper and salt in a pie tin or shallow bowl. Combine buttermilk, milk, egg and hot pepper sauce in another, and Panko Crumbs with Cajun Seasoning in a third.

Dip the chicken strips into the flour mixture, then into the egg mixture, and finally into the Panko mixture.

Place the chicken on a baking sheet and lightly spray cooking spray over chicken.

Place in oven and bake 20 minutes or until crispy and chicken is done.

Serve with Ranch or Blue Cheese Dressing on the side for dipping. Great with fries or deli salads such as Macaroni or Potato Salad.

  1. I have made something similar to these. They came out good! A local restaurant has a wing sauce/sauce for cheesesteaks that is hot and sweet at the same time – of course they won’t give out the recipe! I copied it fairly close, though not as good. I narrowed down the taste of their supposed secret ingredients – hot sauce, with a bit of maple syrup and brown sugar. The sweetness cuts the hotness. It was a big hit with the people I served it for 🙂
