Today is the third Friday in May. On the National Front, this is a very busy day. We should ride our bikes to work today. Of course that would require we have a job, that the job isn’t in the next city or town, and that we own a bike. If this is a day you can get behind, more power to ya.
If not, that’s okay too. Maybe speed is more your thing. So today is also NASCAR Day. Each year on the third Friday in May, NASCAR Day recognizes the drivers, celebrities, corporate partners, the media and millions of fans who come together to raise funds for charitable causes across the nation. Founded by the NASCAR Foundation in 2003 as a way to bring the NASCAR family together to make a difference in the lives of children through awareness and fundraisers. The focus is to improve the health and lives of children. I’d say that’s a pretty good thing.
On May 16, 1957, Congress designated the third Friday of May each year as National Defense Transportation Day. A significant part of the US economy is depended upon the vast network of transportation infrastructure. From our bridges, highways and byways to the waterways and air travel, transportation is vital. This could not have been made more clear than this past year, when we, the consumer, were keenly aware of the importance of transportation and delivery – everything from our medicines to a paint by numbers set to pass the time. So thank you to all the frontline workers – from the drivers to those who maintain the roads – for keeping us truckin’ baby.
Another important part of the third Friday in May is National Endangered Species Day. This day is intended to bring awareness to the importance of protecting all species on this planet, but especially those that are endangered. Throughout the country conservation groups, zoos and wildlife organizations will hold a variety of events to bring focus, improve conservation and further educate the public. We only have one planet, so let’s make it last for everyone.
Finally, today is National Pizza Party Day. Millions of pizza lovers will come together today to celebrate all the goodness of Pizza. So gather friends and family and have a party featuring your favorite style of pizza. From rolls to stuffed crust to deep dish and everything in-between, here’s to National Pizza Party Day!
Grand Pepperoni Deep-Dish Pizza Bake
1 can Grand Southern Homestyle Biscuits
8 oz Pizza Sauce
Italian Seasoning to taste
2 cups finely shredded Mozzarella Cheese
4 oz sliced Pepperoni
Heat oven to 375-degrees. Spray 13-inch by 9-inch (3-quart) casserole dish with cooking spray.
Separate dough into 8 biscuits. Cut each biscuit into 8 bite-size pieces. Place dough in a large bowl. Add pizza sauce, season with Italian Seasoning. Toss to blend.
Spread mixture evenly in prepared baking dish. Spread 1 cup of cheese over the dough bites. Top with a layer of pepperoni, followed by remaining cup of cheese.
Bake 20 to 23 minutes or until biscuits are golden brown. For a complete meal, serve with a side of fresh salad and enjoy.
