Welcome to the first Saturday in August. Today is going to be one busy day for my family. We are celebrating Hubby’s Birthday. Hanging out pool side, playing cards and just enjoying his special day.
Breakfast is important every day. Our minds and our bodies need fuel. Sometimes we don’t have time to prepare a breakfast meal, then sit down to enjoy it and clean up the mess afterwards. That’s when Power Bars come to the recue. I don’t know about you, but breakfast bars often leave me wanting more. That’s when Breakfast Burritos hit the mark. Perfect Morning Breakfast on the go. Unlike many breakfast burritos, these contain no eggs. You could even make them in advance, warm them in the microwave and off you go, with breakfast in hand.
Here’s to a beautiful Saturday surrounded by those we love.

Potato Sausage Breakfast Burritos
4 small Red Potatoes
1/4 Red Onions
2 tablespoons Nacho Jalapenos, diced
1/2 lb Jimmy Dean Hot Breakfast Sausage
4 (6-inch) Flour Tortillas
Cooking Spray as needed
1/2 cup Mexican Cheese Blend
1/2 cup Salsa
Scrub potatoes, dice into bite-size pieces. Place potatoes in a steamer basket insert for INSTANT POT. Pour a cup of water into the Instant Pot. Place steamer basket into the insert. Select PRESSURE COOK, POTATOES, 3 MINUTES, HIGH. Lock lid in place, press start.
While the potatoes cook, peel and dice red onion. Dice Jalapeno Peppers. Set aside.

When the potatoes are ready, heat a skillet over medium heat. Add sausage, crumble as meat browns. Add onions, jalapenos and steamed potatoes. Cook until sausage is cooked through and potatoes are golden.




Warm tortillas on a flat griddle. Lay flat. Place cheese down the middle of each tortilla. Top with sausage filling, then salsa. Fold in ends, wrap and roll into tight burritos.



Grill filled burritos until nicely brown, flip and grill until golden. Serve and enjoy.
