The Catholic Church is rich in Feast Days. For us, our relationship with Christ is more than just Sunday Mass. And even Mass itself is more than just preaching and a lot of Amen! There is scripture, the Homily, and the Communion itself.
Our relationship is not just with Jesus, although He is the center of that walk. It is also with his Mother, our Heavenly Mother. So often when we think of Mary, it is in the stable, holding the baby Jesus. Or meeting her Son on the road to His Death. Perhaps we think of the time Jesus was “lost” in the temple as Mary frantically searched for him. But there is so much more to their relationship then these fleeting moments. She was, after all, His mother, the source of His security as a boy. When God came down from heaven in human form, He did so as a helpless baby. And as a child Jesus knew fear. So he sought refuge in the arms of His mother, our mother.



The story behind the 15th Century Byzantine Icon of Our Lady of Perpetual Help is that the Archangels revealed to Jesus as a young child His execution. The Christ Child, so frightened by His future fate, ran to His mother for comfort and protection.

We are reminded that Christ gave to us His mother from the cross. He knew the power of a mother’s love, and that we should turn to Mary in our time of need. She is there for us, just as she was for her Son, our Lord and Savior. Just as she shared in His suffering, she shares in the suffering of the whole world. Let us pray.
Mother of Perpetual Help, give us a sense of responsibility, that we may do our part in making our home a haven of peace.
Help us to grow daily in genuine love of God and in so doing, a love of neighbor.
Help us to live a truly Christian Life, to walk in the ways of your Son, Jesus Christ
Give us the strength to protect the children of the world.
Holy Mary
Pray for us.
Holy Virgin, conceived without sin,
Pray for us.
Our Mother of Perpetual Help,
Pray for us.

Today is Taco Tuesday, or as we like to call it Tijuana Tuesday. While I know this is breakfast, there is something about sitting down together in the morning that makes the rest of the day more perfect. As a wife and mother, nothing gives me more joy than to rise with the sun and send my family off to face the day well-fed. Scrambled eggs are so quick and so easy, any day is a good day for breakfast.
Green Chile Tortilla Scramble
6 Eggs, beaten
Black Pepper to taste
1 tablespoon Butter
3 tablespoons Green Chile Peppers
1 cup Tortilla Strips
Pepper Jack Cheese for garnish
Lightly beat eggs in a bowl. Season with a pinch of fresh black pepper, set aside.

Melt butter in a skillet over medium heat. Add eggs, cook undisturbed, until the eggs just begin to set. Scramble, continue to cook over low heat until almost fully set.



Add green chili peppers. Stir off heat until cooked through and everything is warm.

Garnish with tortilla strips and cheese just before serving.

Serve with toast for a light yet satisfying breakfast. And if you can, find a good Pepper Jam with just enough heat to compliment the eggs.
