National Chicken Wing Compromise

What are Boneless Chicken Wings? Let’s be honest – they are bite-size pieces of chicken breast that have be prepared much the same way you would wings. There’s nothing “wing” about it. But it is a compormise.

For reasons we do not understand, Kiddo doesn’t like chicken or steak or ribs for that matter still on the bone. It really doesn’t matter how many times I’ve explained to him that the bone added flavor you can’t get any other way, he will pick at the outer edge and never come near the bone. It’s a waste of food and it drives me crazy.

Hubby and I both love chicken wings. We love it any way you make it. I’ve even made Chicken Adobo (Filipino Adobo) using chicken wings and served that as an appetizer. My favorite wing has to be Lemon Pepper. Hubby’s is probably a toss up between Buffalo and Barbecue. Kiddo likes Buffalo Chicken Nuggets. So while this is National Chicken Wing Day, we’re making ours boneless. And that’s okay.

Air Fryer Buffalo Chicken Nuggets
2 large Chicken Breasts
1 Egg, beaten
3/4cup Panko Breadcrumbs
1/2 cup Flour
Cayenne Pepper to taste
Salt to taste
Black Pepper to taste
1 cup Buffalo Sauce (Franks Red Hot)
1 cup Ranch Dressing for dipping

Cut each chicken into strips, then into nuggets set aside.

Beat the egg in a pie tin, set aside. Place breadcrumbs in another pie tin, set aside. Place flour in the third pie tin. Season both breadcrumbs and flour with Cayenne Pepper, salt and black pepper. Whisk to fully combine. Spray the baskets of the air fryer with cooking spray, set aside.

Dip chicken strips in the flour, then egg and finally roll in the breadcrumbs to coat well. Place chicken strips in a single layer inside the baskets. Spray tops of the chicken strips with cooking spray.

Place baskets inside the fryer. Select Air Fry, 375-Degrees, 16 Minutes, press start. Let cook for 8 minutes, pause, remove baskets, flip chicken. Return to fryer continue for another 5 minutes. Check for doneness. Once chicken is not longer pink, remove from air fryer. Place in a boxing bowl.

Pour buffalo sauce over the chicken strips. Gently toss chicken to coat well in the sauce. Arrange on a serving platter. Pour dressing into a bowl, serve with the chicken
