New Hampshire, Salami and Bread

Isn’t it wonderful when three Celebrations can come together so beautifully? Today is National New Hampshire Day, National Salami Day and World Bread Day. More on that in a minute.

Despite politics, despite main-stream media outrage, despite people’s unwillingness to state it out loud, I am not ashamed to say I love this country. Are we perfect? No. We can try, but as long as men (and women) are in charge, perfection isn’t in the cards. Too many things get in the way. Greed, power, vanity. Human shortcomings.

That doesn’t mean we should not strive to be better as a people, as a form of government, and as a nation. Rather than point out all the ways we have failed, we should embrase the good we’ve accomplished, and build from there. Think of it as you would a child. A child that is told over and over again that they are worthless, will eventually give up and give you what you expect – worthlessness. If we buy what the press is selling these days, we may as well all quite even trying to put our best foot forward. Are their racists in this country? Yes, unfortunately be it out of ignorance or hatred, there will always be those who do not see people as they should – as God’s beautiful children. I suspect those who act out of hate actually hate themselves. So hating someone else makes them feel better about who they are inside. And we should pray for them, not hate them in return.

I love this country, its people, its lands, everything about it. We need to stop all this infighting. A house divided cannot stand. Rather than focus on differences and shortcomings, I say let’s shine a light on all that is good about our country.

Today is National New Hampshire Day, and that’s what we’re going to talk about now. New Hampshire is filled with historic charm and quaint atmosphere, as well as bustling cities and diverse population. With cities like Manchester and Portsmouth, New Hampshire has much to offer those who come to visit and those who come to stay.

There are the snow-capped mountains often called the Switzerland of America, and the beautiful ocean-side resorts.

Best of all, when researching foods popular in New Hampshire, I came across a place called Moe’s. Phil “Moe” Pagano opened his first sandwich shop in Portsmouth in 1959. He had just one item of his menu: A Moe’s Italian. Since then, the menu has grown but the loyalty and popularity of his original remains the same. An important “rule” when ordering a sandwich from Moe’s – absolutely NO LETTUCE! See, it’s perfect – a New Hampshire original with bread and salami. So thank you, New Hampshire, for all you’ve given us, including this delicious Italian Sub.

In the Spirit of Moe’s
1 White Onion
1 Bell Pepper
8 Sandwich-Sliced Dill Pickles
1 Beefsteak Tomato
Handful Sliced Black Olives
4 Italian Sub Rolls
4 tablespoons Mayonnaise
20 slices Deli-Style Salami
8 slices Provolone Cheese
Oil and Vinegar Sub Sandwich Dressing

Peel and thinly slice onion, Break into rings, set aside. Stem, core and thinly slice bell pepper, set aside. Pat dill spears of excess pickle juice to prevent sandwiches from becoming soggy. Set pickle slices aside. Thinly slice tomato, set aside. Drain olives, set aside.

Split rolls open. Spear mayonnaise on the inside of the top and bottom roll. Lay six slices of salami, overlapping, on the bottom of each roll. Top salami with 2 slices of provolone cheese per sandwich.

Scatter onions over the cheese, then bell peppers, pickles, tomatoes and black olives. Sprinkle with Sub Sandwich Dressing. Top with top bun. Wrap for a picnic or serve and enjoy. Great with potato chips and a nice, cold beverage.

  1. Good morning, Rosemarie. Beautifully said, plus… next time I’m in Portsmouth, I’ll have to check out a “Moe’s.” Hoping and praying we get through these hard times and emerge a better, stronger nation.
