It’s National Cow Appreciation Day

Today is the Second Tuesday in July. This day is better known as Cow Appreciation Day. Does that mean we should grill up a delicious steak? Nope.

Cow Appreciation Day is the brainchild of Chick-Fil-A. They’d like it very much if you thought of a cow as a pet, and ate chicken instead. Preferably the chicken they are selling. However; we can appreciate a cow and still eat chicken at home. You could even appreciate a cow (as we did on the farm) and grill up burgers, too. Although in the spirit of Cow Appreciation Day, let’s go with the chicken.

Chicken Milanese
3/4 cup Flour
1 teaspoon Italian Seasoning
2 large Eggs
Kosher Salt to taste
Black Pepper to taste
1 cup Italian Seasoned Breadcrumbs
2 boneless Chicken Breasts
1/4 Vegetable Oil for frying
1 tablespoon Butter
1 Lemon, for garnish

Set up three coating stations using pie tins or shallow dishes. In the first dish spread out flour seasoned with Italian seasoning, in the second beat the eggs with salt and pepper, in the final dish spread out the seasoned breadcrumbs.

Thinly slice breasts lengthwise with a sharp filet knife. Pat breast dry. Working with one thin slice of chicken at a time, dredge in flour to coat, shaking off any excess. Dip breast into the beaten eggs, then press into the breadcrumbs. Gently toss breast between the hands so any excess breadcrumbs fall away. Place chicken on a wire rack to hold. Repeat until all the chicken has been breaded.

Heat vegetable oil and butter together in a large skillet over medium heat. Pan-fry the chicken until golden brown, about 3 minutes per side.

To serve Chicken Milanese, slice lemon into wedges, garnish the platter, serve and enjoy. Delicious with sides such as Rice Pilaf and Green Beans. A nice crisp white wine is also welcome.
