Celebrating Delaware Day

There is so much of this country I have yet to see. I truly wish I had more time to explore every back road and small town. All most of us can do is dream a little and research a lot.

Deleware is known as a state of firsts. We’ve talked about this before – first to declare independence from British rule and the first to adopt a territorial state constitution. Deleware should be home to our nation’s capital. After all, it’s the playground of Washington DC in so many ways. Yet when it comes to electorial clout, Deleware is far too small to carry any weight. Maybe if chickens could vote Deleware might have a voice. Oh but I get the feeling the residents of Deleware have their own influence on National Politics. After all, there are more corporate entities formed in Delaware than residents. A whopping 67.8% of Fortune 500 companies are Delaware entities. Yeah, that’s some clout all right.

While the majority of states do not charge a sales tax on food (which is considered a necessity – imagine that), thirteen states still do. Deleware isn’t one of them. The state takes a tax free approach to another item deemed necessary – clothing. There is no sales tax on clothing. Sounds like a good excuse to visit Deleware on vacation with an empty suitcase.

There are a lot of dishes that scream “American” – and pot roast is one of them. Cook even the cheapest cut of meat long enough and it falls apart. Great for Pot Roast over Mashed Potatoes. Yum!

Slow Cooker Pot Roast over Mashed Potatoes
Pot Roast
3 lbs Beef Chuck Roast
Kosher Salt to taste
Black Pepper to taste
1 (15 oz) can Stewed Tomatoes
1 (10 oz) can Cream of Mushrooms Soup
1 envelope Dry Onion Soup Mix

Spray inside of a slow cooker with cooking spray. Season roast liberally with salt and pepper. Place roast in the bowl of the cooker.

In a mixing bowl, stir tomatoes, mushroom soup and dried onion soup mix together. Pour over the roast. Cover, cook on low setting for about 8 to 10 hours. The longer, the more the roast will shred apart.

About an hour before serving, peel and dice the potatoes for the mashed potato bed. Place in a stockpot and cover with cold water. About 30 minutes before the roast is finished, start cooking potatoes.

Mashed Potatoes
3 lbs Yukon Gold
8 tablespoons Butter
1/4 cup Half and Half
Kosher Salt to taste
Black Pepper to taste
Flat Leaf Parsley for garnish

Bring potatoes to a boil. Let cook for 15 minutes or until very tender.

In a 1 cup glass measuring cup, heat butter with half and half in the microwave for about a minute or so, just until the butter melts and the cream is warm.

Drain potatoes, return to the pot and let potatoes dry for a few minutes over low heat. Mash potatoes with a potato masher, working in the warm butter-cream as the potatoes are mashed. Season with salt and pepper.

To serve, spread potatoes out on a warm serving platter. Top with the roast. Strain the cooking liquid for an amazing gravy.

This is down-home delicious with a side of French String Beans and warm dinner rolls.
