Just Another Night on the Home Front

When you live in central California, a cold night might just get down to 32 degrees, although freezing is rare. It doesn’t mean we don’t enjoy some comfort foods that warm you to your toes. Not so much in spice but in love. And that’s the best warmth there is.

When Hubby asked what’s for dinner, I tried to explain this dish to him, but it wasn’t coming out right. Think of wieners with pork and beans, only with more beans and smoked sausage instead of hot dogs. What? Smoked sausage with beans? Yes. What kind of potatoes? No potatoes. No sides? No.

The timer sounded, it was time to serve up supper. One bite and Hubby understood. Potatoes would not make sense. Biscuits were fine, but not fired potatoes.

Well – I asked – what do you think? Hubby was too busy eating to answer, but I did get a thumbs up, and that’s all that matters.

Three-Bean Barbecue Smoked Sausage
1 (16 oz) can Baked Beans
1 (16 oz) can whole Black Beans
1 (15 oz) can whole Pinto Beans
12 oz Smoked Sausage
1/2 Yellow Onion
1/4 cup Brown Sugar
1 tablespoon Dijon Mustard
2 tablespoons Ketchup
2 tablespoons Molasses
1 tablespoon Worcestershire Sauce
Hot Sauce as desired

Drain all three cans of beans, place beans in the bowl of a slow-cooker. Slice sausage into bite-size chunks, add to the bean mixture. Peel and dice onions, scatter over bean mixture.

In a bowl, mix brown sugar, mustard, ketchup, molasses and Worcestershire Sauce. Taste and elevte heat as desired with a few drops of hot sauce. Stir mixture into the pot.

Cover, cook on HIGH for 2 hours, stirring occasionally, until heated through and the flavors are dancing together.

Serve and enjoy. A nice home-spun touch would be to serve this one-pot supper with warm biscuits.
