Plump Little Pigs in Cornbread Blankets

Now I know what you are thinking, what’s this? It’s Friday – how can you be serving up Little Piggies in a Muffin Blanket? Lucky for you, I made this for my family on a lazy Saturday afternoon, just so I could share with you today.

It just so happens that today is Pigs in a Blanket Day. So unless we’re wrapping Fish Sticks in a Blanket (uck) I just could not come up with a way to accommodate the theme of the day with the day of the week. I’ve made a dish very similar to this one as appetizers at a New Year’s Eve party that included children – mostly pre-teens. It’s been so long since we’ve done a New Year’s that didn’t involve children. Not since leaving Las Vegas. Those were the days. A part of me does miss the perks back then, but not the lifestyle. All those air kisses and pressure to look fabulous 24-7, no thanks. While we don’t have five-star dining and the most amazing gourmet markets on the planet (which can get frustrating when I’ve got something special planned only to discover the ingredients can’t be had in a small town), life is real. Both feet are planted on the ground. And it’s so much easier to hear God without all the noise of bright lights.

I cannot imagine serving pigs in a blanket to most of our Vegas companions. That would really have been funny. Simple life? Yes please.

Corn Dog Muffins
Cooking Spray as needed
1 Jalapeño Pepper
1 Egg
1/3 cup Milk
1 boxe Jiffy Corn Bread Mix
3 Dinner Franks
2 cans Hot Chili Beans

Spray the cups of a 12-cup muffin tin and set aside. Stem the Jalapeño Pepper, dice and set aside.

In a large bowl, whisk together the eggs and milk. Add Corn Muffin Mix, stir until incorporated fully. Allow the batter to rest for 5 minutes.

While the batter rests heat oven to 375 degrees. Cut each dinner frank into 6 equal pieces. Scatter the diced Jalapeño in the bottom of each muffin tin.

Using a small cookie scoop, place one scoop of batter into each muffin cup and repeat until no batter remains. Place one dinner frank slice in the middle of each filled muffin cup.

Place Corn Dog Muffins in the heated oven to bake for about 12 minutes or until cooked through.

While the muffins bake empty the chili into a saucepan. Warm over medium heat until ready to serve.

Remove Corn Dog Muffins from oven, run a knife around the edge of the cups to loosen muffins and carefully lift out of the tin.

Arrange muffins on a serving platter along with the chili, serve and enjoy
