He Ascended into Heaven

And is seated at the right hand of God the Father Almighty; from there He will come to judge the living and the dead.” These words are a part of the Apostles Creed. We recite them every Sunday when we come together to profess our faith. The Creed is recited at the beginning of every Rosary.

Faith is based on some rather amazing yet basic truths. Jesus was the Christ – the messiah sent to reconcile the world through the forgiveness of sin. He was crucified, died and was buried. He rose from the dead in fulfillment of the scriptures. He is seated in heaven, and He will come again.

Today is the Feast of the Ascension. It has been a full forty days since the resurrection on Easter Morning. Unlike the 40 days of Lent, when Sundays are not included, all the day since Easter are counted. These were the days when the Risen Lord walked among us. It was necessary not only for those final instructions, but so that, like Thomas, we would all come to believe. And the Easter Season did not end with His ascension. There was one more event yet to come.

Traditionally Ascension Thursday is observed in two ways. The first is that people once gathered outdoors. Often a picnic was enjoyed after Mass and the readings of the day. And the dish most often served was chicken. Today’s secular world does not accommodate these lovely traditions of old. However; we can still read scripture and have a picnic at the end of the day. Blessed be this special day.

Grilled Caesar Chicken Croissant Sandwiches
2 boneless Chick Breasts
Salt to taste
Black Pepper to taste
1 cup Creamy Caesar Dressing, divided
2 tablespoon Butter
4 Croissants
4 tablespoon Parmesan Cheese
2 cups Romaine Lettuce
2 Roma Tomatoes

Split breasts in half lengthwise to create 4 thin breasts. Season with salt and pepper. Place in a casserole dish. Pour in 1/2 cup of the dressing. Turn breasts several times to coat. Let marinade for several hours.

Heat grill to medium-high heat. Oil grate to prevent chicken from sticking. Grill for about 3 minutes per side. Remove from grill, wrap in foil to keep warm.

Heat broiler element in oven. While the oven is heating, melt butter.

Use a serrated knife to cut the croissants in half lengthwise. Place the croissants on a large baking sheet. Brush the insides and top with melted butter. Sprinkle about a tablespoon of the Parmesan cheese evenly on the tops of the croissants. Broil until slightly toasted and Parmesan cheese is melted, about a minute or so.

Tear lettuce into small pieces. Toss with remaining 1/2 cup dressing. Slice tomato into rounds.

To assemble sandwiches: Scatter lettuce on the bottom half of each croissant. Top with 2 rounds of tomato, then the grilled chicken. Close with the top of the croissants. Serve and enjoy.

To dress up this lunch, serve with a Caesar Salad. For a more casual approach, serve with French Fries.
