How Awesome are Fridays!

Fridays in our house have taken on a whole new feel. Hubby is winding down his days “on the job”. Rather than go into the office every day until he retires, his time is now split between in the office and working remotely from home.

I’m not sure who is weaning from who here – Hubby has been a steady fixture at his company for a very long time. Although never given the title “General Manager” he’s filled those shoes for a while. His work day doesn’t start or end with the punching of a clock. There are morning when his phone rings before we’ve even gotten out of bed. Just as there are evenings when our “unwind” time is also interrupted.

Fridays just happens to be one of Hubby’s remote days. I will admit, when they first talked about remote days, I got just a little excited. We could go out for breakfast or maybe have lunch out someplace. That really isn’t the way Hubby works remotely. He’s set up a home office, and truly is working remotely. I pretend he’s not there. The only change to my routine is that I no longer mop the floors on Fridays. It’s still a laundry day and a dusting day, and a day spent tweaking next week’s meal plans.

It’s also Friday – as in meatless meals. It’s been a while since I made myself a special “Friday” treat. I love fancy-pants Omelettes such as a Spinach-Tomato-Feta Omelette. Since Hubby really isn’t here, I don’t need to make something we both like. His lunches haven’t changed, just where he eats them has.

Spanich and Tomato Omelette for One
2 Eggs, lightly beaten
Salt to taste
Pepper to taste
Splash of Milk
3 Bell Tomatoes
1 small Yellow Pepper
1/4 cup Spinach
Butter for the Omelette Pan
Feta Cheese to taste

In a small bowl, beat the eggs with a little salt, pepper and a splash of milk. Set aside until ready to cook.

Chop tomatoes and set aside. Chop yellow pepper (baby bell), and set aside. Grab a handful of baby spinach. Tear into pieces and set aside.

Lightly butter omelette pan over medium-low heat. Let pan warm a few minutes. Pour egg mixture into the pan, swirling to spread out. Continue to cook over medium-low to low heat until egg omelette is nicely set.

Remove from heat. (The omelette will continue to cook from the residual heat of the pan without turning “brown” or drying out). Pile tomatoes and peppers on one half of the omelette. Pile torn spinach leaves over the tomato-pepper mixture. Crumble Feta Cheese over the spinach. Gently fold the omelette in half, rolling the empty half over the filled half. Top with a spinach leaf for color and enjoy.
