Blessed Be the Summer Solstice

While Memorial Day has always signaled the Unofficial Start of Summer (aka boating season), the Summer Solstice is the official start of the summer season.

Now I could bore you to death with the whole polar tilt (23.5 degrees) and the scientific reasons why today will be the longest day and the shortest night of the calendar year in the Northern Hemisphere, but why?

I realize there are people who worry about exposure to the sun, and they would be justified. There are those who suffer from skin cancer (my dad is one of them, although he rarely protected himself in his youth). I truly feel for people who worry about spending their days outside in the sun. Hubby and I are not those people. The Filipino-Spanish-Cherokee in me loves the sun. Hubby is of German-Russian descent, and yet he will be darker than I am by the end of summer.

Hubby lives for summer. I love being near the water in summer, but not so much anything else about summer. It’s just too darn hot. Except maybe the mornings. I do love working in the garden in the morning. I’m more a spring-fall person. Gently breezes, crisp nights and the way God paints the world with beautiful colors.

Today is the start of a new and blessed season. Each changing season imparts its own unique gifts from above. It is only fitting that we embrace the day with the same zeal even if you aren’t a fan of summer or too much sun.

One last thing – while these pastries were delicious, they weren’t as pretty as I had hoped. My bad – I chose the bargan brand puff pastry rather than the more expensive one. Live and learn.

Puff Pastry Sunrise Pinwheels
7 Eggs, divided
Salt to taste
Black Pepper to taste
1 sheet Puff Pastry
6 oz sliced Ham
2 Green Onions

Heat oven to 400 degrees. Line a rimmed baking sheet with parchment paper, set aside.

In a bowl whisk together 6 eggs. Season eggs with salt and pepper, set aside. In a small bowl whisk remaining egg with a splash of water for an egg-wash.

In a sauté pan over medium heat, melt butter. Add the beaten eggs, cook, stirring constantly with a spatula, until cooked through but still soft and moist, about 5 minutes. DO NOT overcook the eggs, as they will continue to set in the oven.

Lay puff pastry out on a flat work surface. Lay ham, overlapping slightly, over the pastry. Spread scrambled eggs over the ham. Snip green onions, scatter over the eggs.

Carefully roll puff pastry tightly over the filling. With a sharp knife or pizza cutter, cut into rounds. Arrange pinwheels on the prepared baking sheet. Brush tops of the pastry with the egg wash.

Place in the heated oven to bake for about 15 minutes or until pastry as puffed up around the ham and eggs, and is a nice flakey brown.
