Many a summer’s day I can remember sitting in the backyard surrounded by family and eating cold, salty slices of watermelon. Back then we had never heard of a seedless watermelon. No, you spit the seeds out. It was a game to see who could spit the furthest.
And yes, for the record, I salted my watermelon. It’s an Okie thing, or so I’ve been told by my Mid-Western Hubby who would never salt fruit. I like salt on peaches, melons of any kind, and most especially tomatoes straight off the vine. Hubby doesn’t believe me, but that’s why pocket size salt shakers were invented – for eating in the fields.

Today is National Watermelon Day. What better way to celebrate the day than with the perfect pool-side adult beverage – a Fresh Watermelon-Lime Margarita. Enjoy this beautiful day that the good Lord saw fit to bless us with. Count your blessings big and small. May the peace of the Lord always be with you.
Fresh Watermelon-Lime Margaritas
Watermelon Juice
2-1/2 cups Watermelon
2 tablespoons Agave Nectar
Cut watermelon into 1-inch cubes. Place the cut melon cubes and agave in a blender and puree until very smooth. If it’s pulpy, pass it through a mesh strainer, using a big spoon to squish the liquid through. Discard the pulp. There should be about 1-1/2 cups of juice remaining.


Watermelon-Lime Margaritas
Watermelon Juice (above)
1/2 cup Siler Tequila
6 small Limes
Pour Watermelon Juice into a blender along with the tequila.
Cut limes in half, juice into the blender. Pulse to blend. Transfer Margaritas to a serving pitcher, chill well.
To serve
2 Limes, divided
Kosher Salt or Tajin Seasoning for the rim, optional
1 Jalapeño Pepper
Watermelon Balls
Cut 1 lime in half, run lime around the rim of the margarita glasses. Dip glasses in the salt or Tajin Seasoning to line the rim. Set glasses aside.
Cut remaining lime into wedges. Stem and slice the jalapeno pepper into rounds for a garnish. Use a melon baller to create watermelon balls.
Skewer lime wedges, jalapeño slices and watermelon balls together for serving, set aside until ready to use.
When ready pour margarita into the prepared glasses, garnish with skewers and serve.
