Today we celebrate Senior Citizens Day. This isn’t just simply a day to appreciate the elderly among us, it’s also about recognizing their contributions to society. After all, with age comes wisdom, or so I’ve been told.
Contributions need not be new inventions, but are often learned experiences. All that history found in books, our seniors have lived first hand. For me seniors have experienced the Depression that swept over the entire world. They know the pitfalls of a society built on the notion give me a hamburger today and I will pay you next Tuesday. They understood personal sacrifices for the good of our country. And from them we can the value to a good swing partner when the Big Bands begin to play. It’s all a matter of listening to that which is unspoken. All precious pearls of wisdom to be passed down to those who follow.




Now that I’m a senior, I can impart the experiences gleemed from a restless generation seeking the meaning of life and truth. Some need to drop out for a while to learn the values of unconconditional love, lifelong friendships and family values we thought were obsolete. As for the generations to follow, only time will tell what their seniors will be able to pass down. Their story is not yet complete.
In every stage of life, we have things to contribute, things that make us realize all lives matter.
As we walked the streets of the French Quarters in New Orleans, I could not help but laugh at the various signs in the shop windows regarding Beignets. Seemed perfect as the feature photo for today’s recipe share.
Simple Blackberry Beignets
Vegetable Oil for frying
1 can Pillsbury Pizza Dough
10 teaspoons Blackberry Preserves
Powdered Sugar for dusting
In a deep frying pan heat at least 2 inches of oil to between 325-350. Once hot adjust burner to between medium and medium-high to maintain the temperature.
On a floured surface roll out the pizza dough. With a large biscuit cutter cut 12 circles from the dough. Place a teaspoon or so of Blackberry Preserves on one end of each circle. Fold dough over and pinch shut.
Working in batches, place a few Beignets at a time in the hot oil. As soon as it buffs up, flip over and continue to fry until golden brown.


Remove with a slotted spoon to paper towels. Blot excess oil, transfer to plates and dust with powdered sugar. Serve with iced Chicory Coffee and enjoy.
