It’s A Fab Friday V-J Everyone!

Kiddo is not a big fan of Fridays in our house. Sure, he enjoys grilled cheese and tomato soups. He even likes Tuna Melts and meatless pastas. When it comes to most things that swim, he’s not always a fan. He’ll eat squid but not necessarily want salmon. That said, this simple battered shrimp received Kiddo approval.

Diablo – Devil in Spanish. Another word for Hot Stuff when it comes to food. Chicken Diablo, Scallops Diablo and Hubby’s all-time favorite Shrimp Diablo. It’s that dash of Habanero Pepper Sauce that brings on the heat.

It’s only fitting that a state that gave us National Treasures such as Jazz, Creole Cooking and America’s best Mardi Gras would have its own special day. Part of the Louisiana Purchase of land from France in 1803, Louisiana was the first of 15 states to be carved out of the region. The great state of Louisiana entered the union in 1812.

Sautéed Shrimp Italiano

This past spring, we planted San Marzano tomatoes in our garden. Having never grown this type of tomato before, we planted two little plants. They grew and grew, crowding out the two pepper plants and took over everything. And they produced. Pounds and pounds of tomatoes. San Marzano tomatoes aren’t the kind you enjoy right off the vine. They taste like unseasoned tomato sauce, which is what makes them the perfect tomato for soups and sauces. Before we knew it, the freezer was full of simple tomato sauces. Call then unfinished. Depending upon the final dish, the sauce is seasoned as needed.

V-J Day’s Tempura Shrimp with Honey Mustard Dipping Sauce

Have you ever heard the expression V-J Day? Up until recently, I hadn’t. I knew it had something to do with the war, as in World War II. V-J Day meant Victory over Japan Day. On August 14, 1945, the news broke around the world that the Imperial Government of Japan would agree to surrender. In Europe, it was August 15th due to the International Date Line. Regardless of which side of the date line you were on, celebrations broke out across the globe with zealous fury. The war was coming to an end.

World Market is one of my absolute favorite places to shop for spices and wines and things that are just different from the readily available products of a typical American grocery store. I go nuts in the pasta section alone. Their Lemon Linguine is so delicious, you could serve it up all on its own with just a kiss of butter.

Bayou Country is Calling Me

While I have wintered in the South Pacific and summered in the Pacific Northwest, I have never stepped foot in the state of Louisiana. That’s not a reflection on the great state of Louisiana, I’ve just never been there. Yet, for reasons I have never understood, every June I get a hankering way deep down inside my soul for bayou country. I hear Credence  Clearwater Revival playing in my head.
