Not every Sunday equates to chicken, but Sundays gotta have something special. It’s the Lord’s Day after all. As Catholics, we don’t just attend Mass, the Mass is Celebrated. Life should be celebrated. I know, sometimes that’s a tall order. Sometimes there is so much pain and suffering you cannot help but wonder why.
Start Sunday Supper on Saturday Night
While I’ve been planning to share one of Hubby’s favorite dishes, I realized I needed to share it on a Saturday for a Sunday Supper. The roast needs to refrigerate overnight for the seasonings to truly blossom, and it takes all day to cook. Hence a Sunday Supper posting on a Saturday Share.

Fall’s Apple-Jelly Glazed Pork Loin
What do you like most about fall? Is it the crispness in the air? The foliage in all its golden beauty? The sweetness of biting into a a just-picked apple? For me, it’s all of the above. I can remember “hunting” for fall with my children when they were small as we searched for leaves that were beginning to turn. Even now, fall makes me all emotional inside.
Sundays and Pork Roast Suppers
Sundays are special and Sunday Suppers should be special, too. Years ago I resolved to make my family Chicken on Sundays. It was how I grew up. Fried Chicken for Sunday supper during warm weather, Roasted Chicken when it was cold outside. That pledge to the past did not last long. I still like to resurrect childhood recipes few months, but eating fried chicken every week for months on end got old really fast.
Pork Salsa Verde
Yesterday evening Hubby and I puttered together in the garden at the end of our day. For me, it’s a special time, the highlight of my day. I look forward to just the two of us talking as we putter. We chat about future plans, world events or whatever happens to pop into our heads.
