Slow-Cooker Cordon Bleu Inspired Chicken Pasta

It’s been a month since we’ve done anything even remotely “Cordon Bleu”, and Kiddo has been clamoring for Chicken Cordon Bleu. Every time we plan out a menu together; he suggest Chicken Cordon Bleu. I keep deflecting. Maybe it’s all this day in and day out of cooking two; three or more meals a day that is making me so darn lazy. Maybe making traditional Cordon Bleu is just too much work.

Slow Cooked Pulled Pork Sandwiches – just what the Doctor ordered

Hands down, this was some of the best pulled pork sandwiches I’ve ever made. These delicious sandwiches deserved lots of step-by-step pictures under perfect lighting. But honestly, it was five in the morning, my camera battery was somewhere other than in its bag, and as I staggered around in our kitchen half-asleep, my blog and snapping photos were the furthest things from my mind. Start dinner, make coffee and pack lunches for my guys, those were the things on my mind this morning.

Crock Pot Peach Pork Chops

As we reach the end of the Peach harvest in California (June to mid-September), I thought it would be nice to take a moment and savor this scrumptious fruit. What better way to embrace a golden peach than to pair them with slow-cooked pork chops for a celebration of food delights? While I miss picking our own peaches at the family farm, since relocating to another agricultural mecca – Stanislaus County – there are fruit stands galore just north of our home. While Almond and Walnut crops far exceed those of cling peaches, a few small farms still exist. Here’s to cling peaches, pork chops and fading summer afternoons!

Crock Pot Chuck Roast with Creamy Dripping Gravy

As pot roasts go, I really like a boneless chuck roast. It holds together well while slow-cooked in a crock pot and has a nice, beefy-flavor. That is not to say a chuck roast won’t cook up fork-tender – it will. Unless you take a fork and shred the roast, it will stay together. This is important – especially when transferring the roast from the crock pot to a serving platter. I would much rather serve nice big pieces of roast beef that you can really sink your teeth into than shredded meat more fit for a sandwich.

Shredded Chicken Tacos (Crock Pot Style)

I love using my Crock Pot – especially during the summer, when you don’t necessarily want to heat up the house with the oven all day or slave over a hot stove. I especially like crock pot cooking on the weekends in the summer. Beautiful days are spent outdoors. With a crock pot, you can throw things together in the morning, then spend the day doing fun stuff, to return at the end of your adventure to a complete or nearly complete supper. Yeah, that’s always nice!
