It seems that most days we rely on National Days, Feast Days or Holidays for recipe inspiration. Lord knows today has a couple of National Days that are mighty tasty – Pizza with the Works (Hold the Anchovies) and French Dip Sandwiches – yum!

Welcome to the Flavors of Hidden Valley
Today is National Ranch Dressing Day. Just what is Ranch Dressing? That’s a fair question for those outside the United States and Canada. Are you a ham or turkey Christmas Dinner family? Some people are both, some are neither. Growing up, it was always a ham for Easter and Christmas, with a great big turkey for Thanksgiving. Its’ strange, I can remember the ham, and some of the side dishes, but not the vegetable. I could be mistaken, but knowing my Dad’s Okie roots, I’d be willing to bet the ham was served with mashed potatoes and red-eye gravy.
Italian Red Potatoes with Fresh Green Beans
This is one of those dishes that is hard to classify. Is it a warm potato salad? A vegetable side dish? Yes, and yes. All I know for sure is that it’s delicious – anyway you want to serve it. These potatoes with green beans are colorful, easy to make and go great with a variety of Italian dishes when other starchy foods such as pasta are not being served. Awesome with Cuocere Stile Italiano or Italian Lemon Chicken Sauté. Popular at the family table, yet pretty enough for company. And such a snap to make. Once assembled, this dish will even hold well in the oven along side a platter of Savory Sensational Chicken Scaloppine. I could go on and on when it comes to Italian dishes. Hubby loves his Mexican; I adore my Italian and French. As for Kiddo, he’s not picky – he loves it all from Pizza and Burgers to Coq au Vin and everything in between.

Zesty Lemon Potatoes
My usual side dish for Salmon Patties are steamed red potatoes (the little cute ones) with a Béarnaise sauce. Yeah, I know what you are thinking – Béarnaise sauce on potatoes!! Girl, what is up with that! Typically, Béarnaise sauce is thought of as something for steaks, and no doubt about it, the sauce is awesome on any steak. At the same time, don’t knock the potato connection until you have tried it.
