Did you know that January 26 is National Peanut Brittle Day? Yep, it is. Like so many foods, only the Good Lord knows how Peanut Brittle was first created. Most of us know the brittle is a chemical reaction between melted sugar and baking soda. Oh sure, there’s a bit more involved, but that’s brittle in a nutshell.

Honoring the Buffalo Soldier

Today is National Buffalo Soldier Day. In 1992 Congress set this day aside to commemorate the formation of the first regular Army regiments of African American soldiers in 1866. Following the Civil War, Congress passed the Army Organization Act, creating six all-black cavalry and infantry regiments. It was the first such creation during peacetime.

Mexican Style Chicken Lasagna

While I might not serve this “Lasagna” on Christmas Day, the garnish of green onions and chopped tomatoes do bring in that holiday colors.  This recipe could easily be doubled for large gatherings, perfect for pot-luck parties.
