Grilled Tequila Lime Steak

A few years back, I came across what seemed to be a quick, easy way to prepare a perfectly marinated flank steak. The recipe called for a combination of McCormick’s Grill Mate Baja Citrus Marinade to be mixed with a little oil, water, vinegar and Tequila. Let the steak marinate for 15 minutes, fire up the barbecue and grill. What could be easier? So off to the market we went. Flank Steak was on sale – great news! However, the Baja marinate mix was no where to be found. After stopping at three different markets, I gave up on the convenience of a mix. A little internet surfing, a little imagination and a little luck produced an awesome marinated Flank Steak.

Grilled Tequila Lime Steak
Marinade
6 ounces Sprite
1⁄3 cup orange juice
2 tablespoons vinegar
1⁄4 cup oil
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons salt
1 teaspoon cayenne
1/4 cup lime juice
4 tablespoons tequila

Steak and Garnish
2 lbs flank steak
4 Tomatoes, cut in half
4 Limes, cut in half
2 Avocados, cut into wedges

Mix ingredients for marinade in a large non-reactive bowl. Gently whisk so as to not break down the carbonation in the Sprite. Place steak in large resealable plastic bag or glass dish. Add marinade; turn to coat well.

Refrigerate 1 to 2 hours or longer for extra flavor. Remove steak from marinade. Discard any remaining marinade.

Grill over medium-high heat 6 to 8 minutes per side or until desired doneness. Cover to keep warm and let rest 5 minutes.

Place tomatoes, limes and avocados on the grill to get nice grill marks while steak rests.

When ready to serve, slice steak across the grain into thin strips. Garnish with Tomatoes, Limes and Avocados.
