I know what you are asking – is the title right? Steamed Potatoes with Lemon Zest? Really? Yes, really. I thought the same thing when I first came across this recipe. I was looking for a potato to compliment my Pesto Roast, and this seemed the perfect pairing.
Typically speaking, I don’t like to try several new recipes at the same time. What if something should go wrong? What if the timing is off? There are so many “what ifs” the first time around. However; how complicated can steaming potatoes be? This dish is so simple, it practically makes itself. My biggest worry was Hubby since he’s not a big fan of lemon. What can I say, the man went back for seconds. The flavors of minced dill and zested lemon favor one another with a freshness that is pleasing to all the senses. This is a side dish that will be gracing our table throughout the year. I can imagine these potatoes with Genoa Stuffed Pork Loin or Ina Garten’s Roasted Lemon Chicken, just to name a few Main Dishes that would be elevated even further with these lovely potatoes as a side. Hum – I’ve got my meals planned through the end of September. A nice pork roast would be perfect in October . . .
Steamed New Potatoes with Lemon Zest and Herbs
2 lbs small New Potatoes or Red Potatoes
2 tablespoons Curly Parsley
2 tablespoons Fresh Dill
1 Lemon, zest only
Olive Oil as needed
Kosher Salt to taste
Black Pepper to taste
Cut potatoes in half and place in a steaming basket over a pot of gently boiling water. Cover and steam until tender when pierced with a skewer, 20 to 25 minutes, depending on size.
In a small bowl, combine minced parsley, dill, and lemon zest.
Spread steamed potatoes out on a rimmed baking pan. Drizzle with oil. Sprinkle herb-zest mixture over the potatoes and stir to coat well.
Transfer to a warm serving bowl and enjoy piping hot.
These potatoes were delicious served alongside a beautiful Roast Supper.
