In our house, Tuesdays are Tijuana Night – anything with a Mexican influence goes. So recently I decided to get a little creative with my Instant Pot. I’ll be honest, didn’t have a clue as to how these chops would fair. One word – delicious!
Before all the craziness hit, Hubby and I did our big-box run. Did not have a clue as we wandered up and down the meat cases at our local Costco that soon there would be a run on big packages of meats. You have to admit, Costco’s meat is delicious and usually plentiful. For the three of us, one package of their thin cut boneless pork chops will create five or six different meals. So now we are looking at a freezer full of thin cut chops. Time to get creative.
One of the things I love about the Instant Pot is that it can do everything from stir-fry to slow cook. Using it as a pressure cooker for these chops had dinner on the table in about 25 minutes. Not bad.
Instant Pot Taco Pork Chops
2 tablespoons Olive Oil, divided
8 Thin Cut Pork Chops
Kosher Salt to taste
Black Pepper to taste
Ground Cumin to taste
3 tablespoons Butter, divided
3 tablespoons Taco Seasoning, divided
1/2 cup Chicken Stock
Place 1 tablespoon of olive oil in the instant pot. Set for Saute for 8 minutes. While the pot heats up, season the pork chops with salt, pepper and cumin to taste.
Sear 4 chops in the pot until golden brown, about 2 minutes per side. Remove the first batch, add more oil if necessary and brown the remaining chops.
Once all the chops are browned, turn the pot OFF. Remove chops from the pot, allowing the Instant Pot to cool down just a little before switching to Pressure Cook. Get the butter ready while waiting for the pot to cool.
Layer pork chops in the pot, 4 chops on the bottom with half of butter scattered over the chops followed by half of the taco seasoning. Repeat with second layer. Pour stock around the edge of the chops so as to not wash away the seasoning.
Place the lid on the pot, set to seal. Manually set the pressure cooker to cook for 6 minutes. Allow the pot to naturally release pressure for 5 minutes, then quick release any remaining pressure.
Place chops on a serving dish, pour liquid from the pot over the chops and serve with your favorite sides such as Spanish Rice and Refried Beans
